What's Up Wednesday May 2025

It's the last Wednesday of the month and that means it's time for What's Up Wednesday. It feels like May flew right by! We aren't often very busy this time of year but this year it felt like we had plans nearly every weekend... I'm not complaining though as we've had lots of fun.

What We're Eating:

Burgers and hot dogs with BBQ Macaroni salad, corn on the cob and salad


 Pulled pork shepherd's pie-- a new recipe I'm inventing on the fly after seeing this listed on a restaurant menu.

 Chicken & Sundried Tomato Orzo one dish with salad




Egg salad BLT Sandwiches (or plain BLT for those that don't eat egg salad) with french fires and salad


Grilled chicken with roasted vegetables and cheesy grilled potatoes 

What I'm Reminiscing About: My husband and I celebrated 24 years of marriage this past weekend; gosh it seems so hard to believe that much time has passed by already! 


What I'm Loving: I've been feeling so creative; I made a bunch of cards, a lot of scrapbook pages, and even started a new painting. (You can see ALL the cards and scrapbook pages I made this month here).
 

 
 





What We've Been Up To:  We went on lots and lots of hikes this month.
 






 


We celebrated Ian's 21st birthday

 
We celebrated mother's day
 

Alec and I went to see a show- Shen Yun
 

 My husband and I spent a day in Mystic.
 
 


What I'm Dreading: Nothing!

What I'm Working On:  I finished up all our Hawaii scrapbook pages so I'm hoping to get the handful of other pages from Jan- now finished soon-- Ian's graduation, Alec's birthday, our trip to Ovo (Cirque Du Soleil), and the Van Gogh museum trip.

What I'm Excited About: We leave for Acadia very soon and I can not wait to be back up near the water and the mountains and see all our old favorite haunts.

What I'm Watching/Reading: Ransom Canyon (Netflix), Jeopardy Masters (Hulu), The Four Seasons (Netflix), Nonnas (Netflix)... then finishing up other shows like The Rookie, 9-1-1, The Resident, etc.

What I'm Listening to: My husband is watching TV next to me so can hear segments of Lost in Space.

What I'm Wearing: Still a lot of pants and long sleeves but I did get to mix in some cropped pants and short sleeves a time or two.
 
 
















 




What I'm Doing This Weekend: We don't have any plans.

What I'm Looking Forward to Next Month: Our Acadia trip, we have a graduation party to attend, summer is starting!

What Else is New: nothing I can think of..

    It looks like a nice month! The nature pictures are pretty- the temps may not be great but everything has greened up so nicely- here as well. We've had some cool days but everything looks so pretty at least :). Your paper crafts are so pretty and I'm impressed by how up to date you stay with your scrapbooking! Have a great day!

Do you remember the TGIF lineups on Friday nights? I can remember planning sleepovers and time with friends around TV Show lineups of our favorite shows... or else trying to set the VCR to record our favorite shows if we weren't going to be home. Things That Make Me Laugh

I loved the challenge of this week's list for our 26 lists link up.  I don't know about you but I really need to laugh more lately.  It's such a great stress reliever. 1.  Books-- I love a good funny book that makes me laugh out loud.  I haven't read one in a while but if you have any recommendations I'm all ears.  The last book I can remember making me laugh was the Un-Honeymooners. 2  The boys being silly. 3.  Watching shows like America's Funniest Videos or Family Feud. 4. My husband.  Most people don't realize it but he's actually pretty funny and often makes me laugh. 5.  Whenever my sisters/ family get together and we get to reminiscing (particularly if my Aunt Elaine is around) we end up laughing so hard at all the old family stories that we are all in tears by the end of the night.  It's fabulous. 6. Evan's 12th Grade Curriculum

Oh boy did we struggle with picking out what to study this coming school year. Not only does Evan already have all the credits he needs to graduate, but this past year he has proved he's ready for college with the 2 classes he took (and aced!) through our local community college. But he was very sure that he did not want to officially go off to college until after he had turned 18.  And yet I thought taking a full year off would look so weird on his college applications! So we pulled together what we hope will be a fun and learning enriching year introducing some new topics and things "just for fun." Math: Evan's friends are taking business math and thought he might enjoy it too so we found this Basic Business math book we'll use and then since Evan doesn't want to forget all his Algebra and higher math we'll also be using this Algebra II series (we bought this and didn't end up using it last year since he took Algebra at the college) but it will b...

11th Grade Check In; How We Did With Evan's Junior of High School

Going into his 11th year of schooling Evan already had 18 high school credits (our state requires 25 credits for graduation and even though we fall under the umbrella of private school-- which means I can set my own standards-- I use the general requirements as a guide, knowing he wants to go to college).  Evan took a few classes at our local community college this year so he has more grades on this transcript than just those given to him by his mom. Plus he's going to need some recommendation letters from "others" too and we were hopeful this would give him a chance to make some connections with other teachers and staff and give him an idea of the workload required at a college level.  They wrote such glowing letters!!  Here's how we've done:  Math:  Geometry-- 1 credit -- Check!  We had already started using both of these and we finished them up by the time he started his college math course.   Must Know High School Geometry  ...
