What's Up Wednesday May 2025

It's the last Wednesday of the month and that means it's time for What's Up Wednesday. It feels like May flew right by! We aren't often very busy this time of year but this year it felt like we had plans nearly every weekend... I'm not complaining though as we've had lots of fun.

What We're Eating:

Burgers and hot dogs with BBQ Macaroni salad, corn on the cob and salad


 Pulled pork shepherd's pie-- a new recipe I'm inventing on the fly after seeing this listed on a restaurant menu.

 Chicken & Sundried Tomato Orzo one dish with salad




Egg salad BLT Sandwiches (or plain BLT for those that don't eat egg salad) with french fires and salad


Grilled chicken with roasted vegetables and cheesy grilled potatoes 

What I'm Reminiscing About: My husband and I celebrated 24 years of marriage this past weekend; gosh it seems so hard to believe that much time has passed by already! 


What I'm Loving: I've been feeling so creative; I made a bunch of cards, a lot of scrapbook pages, and even started a new painting. (You can see ALL the cards and scrapbook pages I made this month here).
 

 
 





What We've Been Up To:  We went on lots and lots of hikes this month.
 






 


We celebrated Ian's 21st birthday

 
We celebrated mother's day
 

Alec and I went to see a show- Shen Yun
 

 My husband and I spent a day in Mystic.
 
 


What I'm Dreading: Nothing!

What I'm Working On:  I finished up all our Hawaii scrapbook pages so I'm hoping to get the handful of other pages from Jan- now finished soon-- Ian's graduation, Alec's birthday, our trip to Ovo (Cirque Du Soleil), and the Van Gogh museum trip.

What I'm Excited About: We leave for Acadia very soon and I can not wait to be back up near the water and the mountains and see all our old favorite haunts.

What I'm Watching/Reading: Ransom Canyon (Netflix), Jeopardy Masters (Hulu), The Four Seasons (Netflix), Nonnas (Netflix)... then finishing up other shows like The Rookie, 9-1-1, The Resident, etc. 
 

 
 
I read 10 books this month:


 
What I'm Listening to: My husband is watching TV next to me so can hear segments of Lost in Space.

What I'm Wearing: Still a lot of pants and long sleeves but I did get to mix in some cropped pants and short sleeves a time or two.
 
 
















 




What I'm Doing This Weekend: We don't have any plans.

What I'm Looking Forward to Next Month: Our Acadia trip, we have a graduation party to attend, summer is starting!

What Else is New: nothing I can think of..

  1. It looks like a nice month! The nature pictures are pretty- the temps may not be great but everything has greened up so nicely- here as well. We've had some cool days but everything looks so pretty at least :). Your paper crafts are so pretty and I'm impressed by how up to date you stay with your scrapbooking! Have a great day!
