Recipes We've Been Making Lately

We've tried so many new recipes this summer; many of them to help us use up our CSA veggies and meat supplies. This is probably one of my favorite series I write since I refer back to these same recipes over and over again.  We tried these refrigerator dill pickles but I didn't have dill seed so I used dried dill weed (1 tsp. in each jar along with 1 clove garlic). I was told they tasted mostly of vinegar so next time I'd put more water and less apple cider vinegar.    This basil vinaigrette was delicious though I did add a bit of lemon juice, salt, and pepper to it.  We tried this fresh raspberry homemade ice cream with the last 2 cups of our freshly picked berries. It was so easy! BUT we didn't really like the frozen chunks of fresh raspberry; next time I'd mash them up really well and possibly even cook them down a bit into a syrup.  We made pork potstickers one day following this recipe-- sort of. Alec had a different pot sticker recipe up on his laptop b...

Recipes We've Been Making Lately: Spring and Summer 2025

We have been trying lots and lots of new recipes all spring and summer and almost all of them have been a big hit! I started this series a few years ago and I can't tell you how many times I rely on my old blog posts to help me jog my own memory about a new favorite recipe we want to try again and again and again. I realize I could just as easily print them out and have them on hand but for some reason I never think to do that!  It also helps that I can jot down any changes we made to the recipe and things I'd like to try differently next time. Do you do this too?   I tried making this honey almond granola but had to make a quite a few substitutions based on what I had on hand. I didn't have 2 cups of almonds so I used 1 cup almonds and 1 cup pecans. I didn't have a full cup of pumpkin seeds so I used what I had and made up the rest of the cup with a mixture of flaxseed, chia seeds, and hemp seeds. I was also out of vanilla extract so we used orange which gave it a nic...

Recipes We've Been Making Lately

It's been a few months since I shared a round-up of recipes we've been trying. I have been looking for lots of sugar free, whole food options and while I don't remember to link to and take a photo of every recipe we try, I do make sure to link to those we really liked so I can make them again. We made this baked cod with garlic and herbs one night subbing out pollock for the cod. It was delicious and so easy! I tried making this skillet lasagna for the rest of the family; they really enjoyed it but our noodles seemed to take forever to cook (and I heard they were still a tiny bit crunchy) While I didn't have all the ingredients I did make this marinated tofu recipe and it was amazing! I poured the leftover marinade (when I went to cook the tofu) into the veggies I was cooking that night. Though I do think I would use much less oil next time. I tried these homemade wheat thin crackers - they weren't bad but I had a hard time getting them crunchy (I was so afraid ...
