Recipes We've Been Making Lately: Spring and Summer 2025

We have been trying lots and lots of new recipes all spring and summer and almost all of them have been a big hit! I started this series a few years ago and I can't tell you how many times I rely on my old blog posts to help me jog my own memory about a new favorite recipe we want to try again and again and again. I realize I could just as easily print them out and have them on hand but for some reason I never think to do that! 

It also helps that I can jot down any changes we made to the recipe and things I'd like to try differently next time. Do you do this too?  


I tried making this honey almond granola but had to make a quite a few substitutions based on what I had on hand. I didn't have 2 cups of almonds so I used 1 cup almonds and 1 cup pecans. I didn't have a full cup of pumpkin seeds so I used what I had and made up the rest of the cup with a mixture of flaxseed, chia seeds, and hemp seeds. I was also out of vanilla extract so we used orange which gave it a nice citrus/summery feel. But it was delicious and so nice and easy to follow.


We made this crock-pot artichoke & sun-dried chicken recipe; I subbed out 1/4 cup of coconut aminos for the chicken broth (weirdly I was all out of broth). It was good! But I do think I'd cut back on some of the lemon next time just because we aren't huge lemon fans. 

I LOVED this Maple Balsamic Vinaigrette recipe; though I only had yellow mustard and not spicy or dijon. It was still very tasty.

We made this crock pot salsa chicken one night for dinner; the boys used it to make tacos while my husband and I had it over rice with diced tomatoes on top. It was delicious and so easy!


 We tried this One Pan Greek Chicken and Lemon Rice for dinner one night. It was easy to follow and tasted great! I did use skinless, boneless breasts since that's what I had on hand and just browned them for only 2-3 minutes on each side. 


I made some Skinny Pizza Dough bagels; I doubled the recipe to make a dozen and baked them in my oven at 400 degrees for 10 minutes. Somehow I never seem to make the holes  in the middle big enough and they go away during baking but they still taste yummy. 

We made this Old-Fashioned Shortcake recipe for father's day and while we didn't think it tasted like any shortcake we'd ever had before we all really enjoyed it so much! It reminded me a bit of a cross between shortcake and pound cake. 



 I made pickled radishes following this recipe from Love & Lemons; it was so easy! I didn't have mustard seeds or peppercorns though so I just sprinkled ground mustard and ground black pepper into the water/vinegar solution while cooking. I didn't make a full batch as I only had 1 jar of radishes. They were pretty good but I don't think I'd make them again (I'm just not a fan of radishes...or pickles! LOL).

 We made this pellet grilled smoked enchiladas recipe; I used far less cheese than the recipe called for and we must have used the wrong sized shells since we only fit 7 in our 13x9 pan and not 12-15 the recipe said it made but it worked us as well. We just had fewer enchiladas each than we might have otherwise but since they were large they were just as filling. We had never had enchiladas before so I wasn't sure what to expect but I really liked them.   

We tried this Ground Beef Orzo recipe for dinner one night; we added a few more herbs and spices and thought it was pretty good. I loved that it was an easy one dish meal!  Next time I'd add all the spices to the burger when I was browning it as we did think it was a bit bland. 

We whipped up these maple mustard apple chicken burgers; the only thing we did different was use ground turkey in place of the ground chicken since that's what I had on hand. They were delicious! I can not wait to make these again!

We made this from- scratch lemon blueberry icebox cake for our family on the 5th of July. It was delicious! I did sub out one layer of raspberries for the blueberries and had to use Keebler Sandies for the cookies since they were the only shortbread cookies I could find. They definitely needed more than 6 hours to soften so I'm glad I made it a day ahead (I had a bit left to make some single serving cups since I used a whole pint of whipping cream instead of just the 2 cups; I really liked the added fluffiness it added)

We tried these oven roasted radishes; also roasting some swiss chard alongside it. I served them with sauteed onions and peppers. It was all SO good! I finally found a way I enjoy eating radishes!

  1. Wow, so many tasty looking dishes here. I will definitely be trying some so thanks for sharing the links. I like a crock pot meal in the summer so I can be out enjoying the lake with everyone and not inside making dinner. The artichoke and sun dried tomato sounds good. Have a nice day!

  2. You all have had lots of good things! I am in a rut again. I think we are having blackened tilapia sandwiches for dinner tonight with some zucchini and potatoes. I have done this meal maybe 4 times. Everyone loves the sandwiches.

  4. I am going to have to try roasted radishes! They sound and look so delicious! I get into a rut so I enjoy seeing others who share what they have made for dinner. Thank you! The Orzo dish caught my eye as well! Have a wonderdul weekend!

  10. Yes, I have a few recipes on my blog that I go back to again and again. I should really print them out.
    That granola sounds so good and sometimes making do with what you have makes it so different and even better than what you were expecting!
    In fact all of the dishes you have made sound pretty amazing, I think my family would like the salsa chicken and the pizza dough bagels.

  13. You've been making some terrific things. No wonder one of your progeny is a culinary student! He grew up with good stuff. I actually have fun when I have to make substitutions. Sometimes they don't work as well but often they're very good.

  14. We started using Hello Fresh. It’s a lot more work than I thought it would be. But, I’m keeping the recipes for later use. Those enchiladas look delicious as does the icebox cake!

    Radishes are one thing that aren't easy to eat, I feel like. But I love how you made them work. You sound exactly like me especially when making granola...substitute, substitute, substitute.

  17. yes it 's great to make changes to old favourites. I like to make muesli (granola) with different seeds and nuts etc depending on what i have in the pantry!

  19. I love the crock pot salsa chicken! I think I would like to try that one. I've tried two new crock pot recipes, but both didn't turn out well unfortunately. It's good to know your recipes did turn out tasty!
