Homemade Raspberry Swirl Ice Cream

 We have been wanting to make homemade ice cream all summer long and it seemed like we either didn't have all the ingredients or we forgot to freeze the bowl to make the ice cream.  We finally got it together to make some and boy was it ever delicious!  Alec offered to make up some raspberry sauce for us to swirl into the vanilla ice cream and that gave it such a flavor punch!   Have you ever tried making homemade ice cream?  We bought the ice cream attachment for our stand mixer and it honestly couldn't be easier.  Plus nothing tastes better than homemade ice cream in the summer.   Ingredients: 2 cups 1/2 & 1/2 1 cup heavy cream 3/4 cup sugar 1 tsp. raspberry extract (or vanilla) 1 cup raspberry sauce To make Raspberry sauce: 2 cups raspberries (fresh or frozen; we used frozen) 2 Tablespoons lemon juice 2 Tablespoons cornstarch 1/4 cup sugar We started with the raspberry sauce so it could cool completely before we made our ice cream....

100 Days of Science #71-- Making Homemade Yogurt Pops

With both my husband and myself on Weight Watchers we've cut out so many snacks but found some really delicious yogurt bars that we're all loving... but at 4 pops for just over $4 a box I thought it might be fun to try making our own.  I just knew this would be a perfect lesson to add to our 100 days of science challenge! We bought a popsicle mold last year and we had mixed results with making a few different kinds.  I thought making some homemade yogurt pops would be a great, yummy, science experiment.   First we diced up some strawberries making sure we had about a cup of them. Then put them through our blender with 1/2 cup non-fat plain Greek yogurt, a 1/2 cup of almond milk, 2 ounces of light cream cheese, a splash of vanilla, and just 2 tablespoons of granulated sugar. 100 Days of Science #35: Homemade Ice Cream!

There is nothing my boys love better than edible science!  With the sunny, hot, summer days we knew it was the perfect time to try out our ice cream maker.  We've made homemade ice cream before with our ice cream in a bag experiment but we really wanted to try out our new ice cream maker and some new recipes. In fact we tried out two recipes on two different days.  First, we made some sweet cream ice cream with M&M's and white chocolate chips. Ingredients: 1 cup whole milk 2 cups heavy cream 3/4 cups sugar pinch of salt M&M's candies White chocolate chips In a small bowl we combined the milk, cream, sugar and salt until the sugar was completely dissolved. Then we covered it up and chilled it in the fridge for 2 hours. Homemade Coffee Ice Cream with Dark Chocolate Chips

We've been having lots of fun with the ice cream maker attachment for our Kitchenaid stand mixer.  We've mixed up a few different recipes but one family favorite was the homemade coffee ice cream with dark chocolate chips.  It was SO good and creamy!   I just love how easy it is to make homemade ice cream!   Ingredients: 1 cup whole milk 3/4 cup sugar 4 packets of single serving sized Folgers instant decaf coffee 1 tablespoon cocoa powder 2 cups heavy cream 2 teaspoons vanilla extract  1 cup dark chocolate morsels  In a small bowl we combined the milk, sugar and instant coffee.  Then we added in the cocoa stirring until the powder was blended into the milk.  Then we slowly added in the heavy cream and vanilla.
