A Typical Week of (Mostly) Plant-Based Meals

I've been toying with the idea of sharing a typical week's worth of menu items but found that most weeks I don't eat a huge variety of different meals.  Since I'm the only one eating most of these vegetable heavy meals I often eat the same dish a few days in a row.  Instead I decided to take some photos from the entire month I've been eating this way and showing some of the various items I eat for meals.  Breakfast:  Most days I opt for fresh fruit with homemade granola but I'll also happily eat leftovers for breakfast.  On weekends I tend to cook up large pans of mixed vegetables and I'll heat up some veggies and then pop either a regular potato or a sweet potato in the microwave to go with them.  grapes, berries, pineapple and my homemade granola Sweet potato (with a bit of butter/salt/pepper) and zucchini, summer squash, onions and peppers Pan fried potato with zucchini, peppers, onions, mushrooms, and edamame I've also begun trying a few recipes with...

Going Plant Based/Whole Foods, the First Steps in my Journey

After reading Ultra Processed People and In Defense of Food I knew I wanted to embrace a more plant based/ whole foods diet.  It wasn't a huge leap for me as I already eat a ton of veggies, fruits, and have been limiting processed foods for years anyway.  I have been easing into this slowly; we didn't rummage through the foods in our house and throw anything away but as we are using up products I am reading tons of labels to pick the best choice replacement (or making it myself!). Plant based does not mean vegan or vegetarian (at least not to me anyway- some people disagree); I'm not giving up animal products but I am trying to eat less of them. Limiting processed foods this is a much harder/ grayer area. For now I'm trying not to buy anything with more than a handful of ingredients listed on the back and I'm making sure that I know all (or nearly all) of  the ingredients listed-- no "weird" or long words I can't pronounce.  Incorporating more whole gr...

Let's Look At... Our Grocery haul

 I don't always join in with Shay and Erika for their Let's Look but this month just founded much too fun to skip! I actually took photos of our grocery haul a few weeks running to give you some idea of what we usually buy and what things are just an "occasionally" buy kind of thing.  Now before I show you these photos I do have to explain that no, we are not vegetarians.  However, we did just buy 1/2 a cow last month (from a local farmer/ butcher-- and honestly I think that much red meat is going to last us well over a year!) and had previously stocked up on all sorts of chicken breasts and tenders at BJ's so we rarely buy meat on our weekly grocery run.   Even so most of our weekly grocery haul is fresh fruits and veggies... that has been that way for years but I've really been amping up as we try to limit processed foods and I move toward a more plant based diet.  The first week our table looked like this: We go through a lot of food because all 5 of us ...
