10 of Our Favorite Ways to Serve/Eat Pulled Pork
My husband makes pulled pork fairly frequently. I started making pulled pork in the crock pot years ago and we've since tried a few different recipes (like this cranberry BBQ pulled pork) but it wasn't something I thought about very often. All that changed when my husband got a smoker as an early Father's day gift a couple of years ago!
Now, I feel like we have been eating pulled pork at least a few times a month (and when I say we I really mean they as I hardly ever eat any at all because I don't like pork or smoked meats). He'll usually smoke up a few pork butts and shred them both then we eat some for dinner and sort the rest into a couple of freezer portions for easy, nearly ready-made weeknight dinners.
1. Pulled pork sandwiches-- The simplest way to serve pulled pork; everyone just piles the pork and cheese (perhaps coleslaw) on a bun.
2. Pulled pork rice bowls-- I cook up some white rice and veggies and everyone portions out their own bowl.
3. Pulled pork baked potato boats-- We used to have a restaurant near us that only sold stuffed potatoes and one of my husband's favorite was their pulled pork potatoes so we make them at home now. We bake up some large potatoes in the oven, cut them open and top with pulled pork, cheddar cheese, sour cream, chives.
4. Pulled pork quesadillas-- we spread some cheese on a soft tortilla and then pulled pork and more cheese before topping it with another tortilla. Then we bake them in the oven until the cheese melts.
5. Pulled pork mac and cheese-- I add in a cup or two of pulled pork to our favorite mac and cheese before popping it in the oven. My boys like to add extra BBQ sauce while eating it. (recipe here)
6. Pulled pork nachos-- We spread tortilla chips out on a cookie sheet lined with parchment paper, topped them with pulled pork and cheese and baked them in the oven for 20 or so minutes until the cheese was melted the pork was heated through. Then I drizzled BBQ sauce over it.
7. Pulled pork tacos-- my boys like soft shells but hard shells would work too; we heated up the pulled pork, added just a touch of taco seasoning then spread our favorite toppings on the shells (this one has sour cream, lettuce, tomato, cheddar cheese, and pulled pork).
8. Pulled pork pot stickers-- We used a recipe for pork pot stickers and subbed out the ground pork for leftover pulled pork!
9. Pulled pork cheeseburgers-- Just adding some pulled pork and BBQ sauce to grilled cheeseburgers. Simple and delicious!

DeleteI'm not a big fan of pork, either. We have a restaurant that has pulled pork nachos and I do partake of those. I don't like getting the fatty parts of the meat. This sounds like a bit of a break for you since your hub smokes it. Love all these ideas!
ReplyDeleteYeah, I don't like the fatty parts either (and if I'm shredding it I tend to pull those out and throw it away) but these are nice, quick easy dinners for me since the bulk of the work is done.

Pulled pork is one of those things I like when I want it. The problem is you end up with so much of it! Thanks for all the different ways to fix the leftovers. I do freeze a lot of the meat, too.
