Monthly Meal Planning #2

 I did pretty good with my monthly meal planning again this month.  My only problem was that there were a few weeks I packed too many high point meals into the same week and I had to juggle and rearrange a few items.  Overall though I am really enjoying this monthly planning versus the weekly planning I used to do!



1.  Crustless quiche with salad- I actually made two; one with just diced ham and shredded cheese and one loaded with vegetables like broccoli, mushrooms, onions, and diced tomatoes. 


2.  Pot roast, weight watchers smashed potatoes, broccoli, and salad.


3.  Chicken teriyaki casserole-- We used this recipe (though I did add in extra vegetables) and it was only 5 WW points per serving with a good sized portion too.  Delicious! 


4. Burgers, hot dogs, fries, and salad.

5. Stuffed shells with sauce and salad (we used this recipe). 


6. My husband and I went out for a date night at Pizzeria Uno and the boys ordered themselves some pizza which Ian went and picked up.  

7.  I cooked up some salmon (with chicken tenderloins for the boys) and tried a new side dish of butternut squash/ apple casserole that was so delicious!  I served them with rice and riced cauliflower. 


8. Citrus yogurt marinated chicken breasts, roasted potatoes, a sheet of roasted assorted vegetables with tossed salad.

I forgot to take a photo so here's what our citrus marinated chicken tenderloins looked like way back when... 


9. Turkey/ noodle soup (we used our favorite chicken noodle soup recipe and just subbed in turkey) and challah bread (using Dara's recipe).  


10.  Pulled pork sandwiches with salad. 

11. Chicken, sundried tomatoes, and orzo-- the recipe will be coming to the blog soon!


 
12. Spaghetti and meatballs (though I had zoodles) with salad. 

13.  Rib eye steak with roasted potatoes, asparagus, mushrooms, and salad. 

14. Pecan crusted chicken, rice pilaf, assorted vegetables and salad. For dessert I made spice cupcakes with dark chocolate cream cheese frosting




15. Hamburger soup (though I subbed 1/2 cup barley for the pasta and used whatever veggies I had on hand.)

16. Chicken tender wrap sandwiches with baked chips and salad.

17. Caprese tuscan chicken made with fat free mozzarella cheese with pasta, sauce, and salad (though I made zoodles for me).


18.  Chicken fajita chili 



19. Baked fish and chips (with butternut squash fries for me & chicken tenderloins for the boys), cole slaw, and salad.


20.  A second last minute date night for my husband and I (we headed to Texas Roadhouse while the boys cooked up some pasta and sauce for their own dinner).

21. Pot roast, baked potatoes, and salad. 


22. Pork chops, egg noodles, and peas

23. Chicken cordon bleu and broccoli casserole  (with a few tweaks to make it more WW friendly like almond milk in place of the milk and Brummel and Brown spread in place of the butter with fat free cheese in place of the shredded swiss). 


24. Baked ziti with salad

25. Shrimp stir fry over rice (riced cauliflower for me with chicken tenderloins for the boys in place of shrimp) 

26. Stuffed acorn squash with salad... I have no idea what the boys will be eating; maybe a fend for yourself night?!


27.  Crock pot turkey breast with stuffing and broccoli



28.  Healthy chicken and vegetables with pasta, sauce, and salad.

  3. Oh my gosh friend, I am completely drooling! I just don’t take food pics as much anymore or share recipes and I should! We eat well around here and I love seeing that you do as well! That Caprese chicken sounds amazing and I make a crustless quiche at least a couple times a month! GREAT POST!

    1. Thanks! I find it harder to take GOOD food photos in the winter with the poor lighting at night when we're ready to eat but I have been trying to take more food photos and share more recipes.

  4. Monthly meal planning is a lot more work, but it is SOOOOO much nicer to knock out and not have to do again for a few weeks. Good job planning this way! So many of these meals you shared looked super yummy and I will be saving some to try out for our family. Thank you for sharing!!

    1. I am always trying to find new ways to prepare chicken as I like to eat it all the time and my oldest son really does not (and is quite vocal about it!).

  9. Mmmmm...that butternut squash casserole could easily be a main dish. Looks so yummy! I am going to give it a try. Thanks for sharing. I usually plan meals weekly too, but I like your idea of planning for the month better.

    1. I thought so too! Though next time I'd add a lot less bacon as I thought it took away a bit from the yummy taste of the apples and squash.

  13. It all looks delicious! I am actually making some stuffed shells tonight with all kinds of things of dairy leftovers. I am looking forward to coming up with some interesting meals for lent as we will fast from dairy and meat and want to me more creative about it this year.

  16. Monthly meal planning is a lot of work but I'm kind of hooked on it now. Meal planning for just one week feels so short!

    1. It does! I like that it also helps us to have a much wider variety of meals; weekly meal planning led to a lot more repeats.

  17. So many yummy sounding recipes! I want to try the Chicken Cordon Bleu and Broccoli casserole. I have recently started subbing almond milk for regular milk in recipes and it works so well! Thanks Joanne!

    1. I try to sub it with regular milk too and it does work so well. I find little changes like that make such a huge improvement on the overall fat/ health content of the meal.
