Throwback Tuesday: Computer Coding for Kids

It was one of those homeschooling days that I know they'll be talking about for months, if not years, to come. There was a homeschool field trip to the Microsoft store for a free coding class that we were participating in. I was half excited and half dreading it; I knew the kids would love the class and the experience but I'm not a huge fan of driving through cities, in traffic, or to any place new.  Homeschooling has really forced me to try new things outside of my comfort zone.  We're constantly trying new things, driving to new places, and meeting new people; all things that tend to make me uneasy.  As usual it was a good thing we went. We had such an amazing day! I know I keep saying that but it really was amazing! And you just can't beat free! Chicken Fajita Chili Recipe

My husband loves chili but he's usually the only one that eats it and I always felt like it was a bit of a waste to prepare a whole crock pot full of chili for one person.

We've tried various recipes over the years and I'm always looking for new ways to make chili more enticing.  

A few weeks ago we had chicken fajitas for dinner and we had a lot of the chicken/ green pepper/ onion mixture left over with all of the seasonings.  I knew I didn't want to throw it away and thought I might be able to use it to come up with a new chili recipe.


Voila!  The Chicken Fajita Chili was born.



We have a nice small crock pot that was perfect to set the chili in for the day but you could easily prepare this in a medium sized pot.

Since my chili recipe was thrown together using a lot of leftover ingredients all amounts are approximate.

You will need:

2-3 Chicken tenderloins
1/2 green pepper
1 can sliced mushrooms
1/4 onion
1/2 package of fajita flavoring packet
1/2 can each of:
             Red Beans
             White Beans
             Black beans
1 Can corn
1 6 ounce can tomato paste
1 Tablespoon chili mix

First I combined our leftover chicken, mushrooms, green pepper, onion and fajita mix together with the corn and all the beans beans. Stirring until everything was well combined.

Next I added in the can of tomato paste and chili powder.

After it had simmered on low for the whole day we served up bowls full of chili and served them with honey cornbread muffins.

It was delicious and I just loved that added fajita flavor and those big bites of chicken!

    This looks delicious! I am a newcomer to the whole chicken added to Mexican food thing (or any tomato-based dish, actually), but I am loving it! I'm not sure why I waited so long. I've printed this one out and will try it.

Ian is starting a new film study unit in our homeschool.  He loves watching movies and when I found the Thinking Tree Film Study Journal I just knew Ian would love the opportunity to watch movies as part of his homeschooling day. Favorite TV Shows Growing Up in the 80's and early 90's

Do you remember the TGIF lineups on Friday nights? I can remember planning sleepovers and time with friends around TV Show lineups of our favorite shows... or else trying to set the VCR to record our favorite shows if we weren't going to be home. And through the years I had SO MANY favorites! Growing pains aired in 1985 which put me around age 8 and it stayed on the air until I was 15 or so; I'm pretty sure most people in my age group watched mostly for Kirk Cameron and all his antics.  I still have a soft spot for family sit-coms!  The Facts of Life aired when I was just 2  and stayed on the air until I was 11 so I'm sure the episodes I remember so fondly were either some of the later ones and then reruns shown later on when I was old enough to watch from the beginning. My husband makes pulled pork fairly frequently.  I started making pulled pork in the crock pot years ago and we've since tried a few different recipes (like this cranberry BBQ pulled pork ) but it wasn't something I thought about very often.  All that changed when my husband got a smoker as an early Father's day gift a couple of years ago!   Now, I feel like we have been eating pulled pork at least a few times a month (and when I say we I really mean they as I hardly ever eat any at all because I don't like pork or smoked meats).  He'll usually smoke up a few pork butts and shred them both then we eat some for dinner and sort the rest into a couple of freezer portions for easy, nearly ready-made weeknight dinners.  1.
