What's Up Wednesday: October 2020

Since it's the last Wednesday of the month it's time for what's Up Wednesday where I join up with Sheaffer and Shay to answer a few questions.
What We're Eating This Week: 

Our favorite Pot roast with roasted potatoes and mixed vegetables






Beef stew (replacing half the potatoes with diced butternut squash)





Fish casserole (for adults) and chicken, rice, & corn of the kids





What I'm Reminiscing About: I was looking through old photos and found all of these from 4 years ago when we went Trick or Treating at Great Wolf Lodge with my sister and her kids. 













What I'm Loving: All the yummy apple baking we've been doing!

What We've Been Up To: Not a whole lot.  I've been resting quite a bit after my surgery last month  We have started getting out for longer walks though.





What I'm Dreading: Two things actually: we've had a few nights of frost already which means snow probably isn't all that far away.  I'm dreading those cold snowy days I actually have to go somewhere.  

I'm also dreading report cards coming out in the next couple of weeks as I am anxious to see how all these online grading snafus are going to shake down for Alec.  I hate that I feel like his grades are not a real representation of his actual work and knowledge. 

What I'm Working On: I started my Christmas shopping/planning and have begun thinking about Christmas crafts and cards I want to make.  

What I'm Excited About:  Thanksgiving!! I just love Thanksgiving; the food, time with family, and fun traditions.  I even worked on a few Thanksgiving/fall themed craft this month.





What I'm Watching/Reading:

Watching: Having spent my first few days/weeks in bed I watched quite a bit of TV/movies this month.  You can check out this post with a list of everything I watched this month. 




Reading: I also did a fair bit of reading this month.  Even managing to read two full books while I was in the hospital.  My full summary post is available here




What I'm Listening to: The washing machine, dryer, and dishwasher are all running right now.. seems like they always are.  I can also hear Alec's teachers talking in the  background for his virtual schooling. 




What I'm Wearing: I spent the majority of my month in yoga pants, pajamas, and other comfortable clothes.  






What I'm Doing This Weekend: Halloween night we'll watch a family movie and curl up with some candy and sugary treats; our new tradition since the boys gave up trick -or- treating a few years ago. 

What I'm Looking Forward to Next Month:  Ian's driver's ed. is wrapping up and Alec's karate class is switching to Saturday mornings so I am really looking forward to quiet nights at home with the whole family once again.  

What Else is New: I have my 6 week post- op visit coming up next week and I should be all cleared to resume life as usual.  I never thought I'd miss cleaning or exercising but I do!

  2. I'm glad to hear your recovery is going well. And yes, I'm enjoying the quiet nights this week. It's allowing us to get some other things done. And I am also dreading the frosty mornings when I have to scrape off the car... Ugh.

    1. Yes, scraping off the car is the worst and I was always so bad at doing that! Scraping off just enough to barely see and then cranking the heat to hopefully melt off what I hadn't scraped.

  3. All your meals look so yummy! We had a few wet snowflakes here yesterday, so snow will be here soon too. In fact they have already had snow Up North! All I do is live in comfy clothes these days. If I want to feel a little more fancy I put on a maxi skirt, which is still comfy.

  5. Butternut squash in beef stew sounds really good. I need to try that!

    1. Yeah, I just dice up some butternut squash and use it in place of like 1/2 the potatoes. They add a nice bit of sweetness.

  7. I need to come over for some of your yummy meals! I actually need to take a minute to plan next week's menu. Been working on trying to schedule a mammogram and looks like need to do a yearly check up so have to find a doc first...

    1. I need to find a primary care giver and get my yearly check up, blood draw, and mammogram too. The one I found last fall left the field of medicine 2 months later. It's on my to do list... not sure I'll actually get it done anytime soon but I'm hopeful. I have the worst time finding doctors!

  8. All of those apple desserts have me drooling. I have never made apple bread. It looks amazing. I love the fashion choices that you get on Amazon. So many cute things.

  14. We took our grandkids to Great Wolf Lodge in the Poconos last summer (2019) and were scheduled to go again this spring. What a fun place for the kids! I hope we get to go again in the not-too-distant future.
