Sausage & Tortellini Soup In the Crock Pot

I love a good hearty soup in the winter but we were getting kind of sick of all the same old soup recipes we've made over and over.  I was looking for something different when I saw a pin for sausage & tortellini soup.  We made it once and enjoyed it so much we made it again just a few weeks later!



It was so nice and easy too; I just put everything into the crock pot and then added in the final two ingredients just 30 minutes before serving.

Ingredients:

3 sausage links; browned and sliced
1 cup carrots; sliced thin
1 4 ounce can sliced mushrooms
1 clove minced garlic
1 Tablespoon minced onion
2 containers (8 cups) chicken broth
1/3 cup cream of mushroom soup mix (or 1 can cream of mushroom soup)
2 cups 1/2 & 1/2
1-2 cups frozen, chopped spinach
1 package cheese tortellini.

In a large crock pot combine sliced sausage, carrots, mushrooms, garlic, onion, chicken broth, and cream of mushrooms soup.  Stir well to combine cream of mushroom soup with the broth and then let sit on low until 30 minutes before to serve.

Add in 1/2 and 1/2 and tortellini; cooking until tortellini is cooked through and tender.  Serve hot.
