It's not the last Wednesday of the month and while I have no idea if Sheaffer and Shay are hosting next week or not I love having this month wrap up to look back on and didn't want to just skip it.

What We're Eating: I just shared a post Monday with all the new recipes we've been trying lately. We've had lots of "old" favorite recipes mixed in too this month.
My favorites this month include:
Shrimp stir-fry over riced cauliflower with homemade pineapple teriyaki sauce.
crustless quiche and salad
Homemade eggplant Parmesan with zoodles and sauce.
My lunch salads-- tossed salad with tuna, seeds (pumpkin and basil in this photo), dressing, & croutons
What I'm Reminiscing About: Thanksgivings when the boys were little and my whole family used to come over. Our meals have gotten so much smaller over the years. (sorry no photos; I was much too busy cooking for 20+).
What I'm Loving: I finished up all the scrapbook pages for our Glacier National Park trip and I am just LOVING how they turned out! I'll have a post sharing ALL the cards and scrapbook pages I mage this month but here's a sneak peek.
What We've Been Up To: It's been a pretty quiet month. I spent a lot of time crafting, painting, and reading. I tackled a couple of new puzzles and we finally went to see Hadestown-- next up on our list is Wicked but that's not until spring.
What I'm Dreading: Snow and ice!
What I'm Working On: I've been working on making all my Christmas cards. I still have a lot to make.
What I'm Excited About: Thanksgiving! Alec will be home next week with one of his new roommates in tow. I'm looking forward to getting to know her better.
What I'm Watching/Reading: America's National Park (Hulu), Will Trent (Hulu), Nobody Wants This season 2 (Netflix), latest season of Ghosts (Paramount+), Ballard (Prime), Leanne (Netflix), Materialists (HBO Max), Runarounds (Prime).
What I've been reading this month:
What I'm Listening to: I've spent so much of my month listening to some really great audiobooks!

It looks like a really nice month so far. I don´t mind quiet months and hibernating a bit when the weather is cold. Look at all that you were able to get done being home more- that´s how I look at it when I´m home more (I don´t do the same creative things that you do but I get more of my projects done). Looking forward to seeing your paper crafts from the month!
ReplyDeleteMy answer for "what I'm doing this weekend" should I have posted today would've been the same exact thing- ha! Need the extra time for the Thanksgiving Week shopping so taking my time on Saturday so I don't miss a thing! Stores will be nuts next week right?

ReplyDeleteHow fun that you are hosting Alec's roommate. I wonder if Alec will want to cook? If the roommate is also culinary, that would be fun to cook with them. I bet they would like the Next Gen Chef that I watched on Netflix. It was so good!
