Monthly Menu: Meal Plan #8

I was so proud of myself that I had managed to mostly stick to our monthly menu planning... until August hit. 

I had to reconfigure this month's menu 2/3 of the way through the month when we threw a last minute cook out and had lots of leftovers to use up.  Then a tropical storm blew through and I had to redo it all again trying to come up with meals that wouldn't use our oven or much power for a few days. 


We started out this month on vacation so we ate out A LOT and I really tried to make sure the rest of our month was made up of healthier, home cooked meals.  I tried to pack our menu with low and zero point foods from Weight Watchers and I think I pretty much failed at that. 

We had so many parties-- for fun, celebrating a birthday, throwing a going away party and with it came an overload of sweets, red meat, and unhealthy dishes. I'm hopeful to do better in September with a better routine and a back to school mindset. 

1- 7th We were on vacation and ate out for most dinners or else we just had sandwiches and chips.  

8. Grilled pineapple teriyaki chicken, roasted asparagus, corn on the cob and couscous with salad. 


9. Just peachy BBQ grilled pork tenderloin with green beans, roasted potatoes, and salad.


10. Fend for yourself night after Alec's party/cookout in the afternoon where we mostly ate leftover hot dogs and burgers and chips.  

11. Tacos and taco salad.


12. Weight Watcher's American chop suey and salad.



13. Key West Shrimp with assorted veggies over rice. (I cooked up some plain chicken tenderloins for the boys).  I did have to cook my shrimp on the stove with a late day thunderstorm in our area.

14. Last minute take out pizza and grinders to go with the espresso cheesecake for my mother in law's belated birthday celebration. (we worked much later on her house than we had planned and were too tired to cook the burgers and tater tots she had requested).


15.Chicken/ orzo one dish with salad


16. Pulled chicken wraps (I just put chicken breasts in the crock pot with BBQ sauce and shredded them using meat claws then piled the chicken with a bit of cheese inside a wrap) with tater tots/ butternut squash fries and salad.


17. Grilled salmon with corn on the cob and coleslaw with salad. 


18. Steak stir- fry with oven roasted mushrooms and green beans over rice.


19. Egg salad BLT sandwiches with salad and baked chips.


20. A last minute going away cookout for my sister; we served all sorts of grilled meats, roasted potatoes, roasted veggies and some fruit salad plus cookies, brownies, and s'mores bars for dessert.  


21. Leftover steak, potatoes, and veggies from the cookout the night before. 

22. With tropical storm Henri dumping lots of wind and rain on us I decided to take out some wraps and use the leftover chicken from the party for chicken wraps with salad and fresh fruit. (knowing we wouldn't have any power by dinner).

23. Unsloppy joes with salad (and the boys had chips)



24. Grilled ham steak with BBQ macaroni salad and corn on the cob.


25. Grilled chicken parmesan (a new "recipe" we made up!) with spaghetti, sauce, green beans and mushrooms.

26. Another shrimp stir- fry over rice (cauliflower rice for me & chicken for the boys)

27. Waffles with breakfast sausage, fruit, and scrambled eggs.

28. Crock pot turkey breast with broccoli, roasted potatoes, and salad. 


29.  Burger and hot dogs (turkey burger for me!) with diced potatoes mixed with cubed butternut squash and salad.

30. Turkey, broccoli, and rice casserole (using this recipe and subbing in turkey & other low fat options to keep it low in WW points).


31. Pesto pasta with mixed veggies. Using whole wheat pasta!

    1. My goal is mostly to just eat at home and I'm pretty flexible with our meal plan so yes, I think we did pretty well too.
