What's Up Wednesday; January 2021

 And just like that the first month of the new year is already almost over!  Since it's the last Wednesday of the month I am linking up with Shay and Sheaffer for What's Up Wednesday. 
What We're Eating This Week:  For the first time ever I am sharing our full menu for the month-- it will be on the blog this Sunday! 

Sunday: Italian herb marinated chicken with squash casserole and steamed broccoli



Monday: Baked shells with salad and garlic bread-- this is a totally new recipe for us!

Tuesday: Baked potato and ham chowder-- Another completely new recipe!

Wednesday: Shaved steak grinders with salad and Cole slaw



Thursday: Homemade Weight Watchers pizzas with salad. 



Friday: Parmesan crusted haddock with baked potato and green beans (with chicken tenderloins for the boys)

Saturday: Sundried tomato chicken & orzo I saw on the Other Side of the Road -- That's three new recipes in one week!

What I'm Reminiscing About: This guy turned 15 this month and I just can't believe how fast that time flew by! 






What I'm Loving: We got to spend time with friends and family this month and that feels like such a rare thing these days that I am just loving it whenever we do! 

What We've Been Up To:  Mostly a whole lot of baking!  And I mean... A LOT.









What I'm Dreading:  Evan's CAT scan should be scheduled for next month and I am just dreading hearing that he might need surgery... but I'm also dreading hearing that he might not be eligible for surgery and might just have to live with the noise in his ear.. either way I'm not looking forward to it. 



What I'm Working On: I finally got a few more scrapbooking pages put together and am finishing up from Aug- Dec. of 2020 (which really isn't more than a half dozen pages since we didn't do a whole lot those months).




What I'm Excited About: Seeing this kid in his culinary uniform and getting out in nature when the weather is nice (ish).







What I'm Watching/Reading: I fell a bit short of my reading goal this month but I can't even complain because I read some really great books! You can read all about them here. 

 
What I'm Listening to: Alec and his teachers working through their school day. 

What I'm Wearing: Lots and lots of sweaters with leggings and jeggings. 







What I'm Doing This Weekend: Probably just taking Alec to his karate class.

What I'm Looking Forward to Next Month: My girlfriend and I have been planning a tour of Newport with a tour guide to talk with our boys about Newport's role in the slave trade and I can't wait to see her and her son as well as spend some time walking around Newport and learning more about it's history! 

What Else is New: I just can't leave without sharing some of the amazing sunrises and sunsets we've been seeing this month (as well as the bald eagles we've seen)

  1. Your sunrises and sunsets are my favourite part of this whole post. We've just had a WHOLE lot of grey this month and I get so excited every time I see the sun.

  7. Yum! All of the foods you make look so yummy!!! Praying for Evan, these things are so tough. I don't think I had the same problem, but I had tubes when I was little and the hole never filled in, so I had to have a tympanoplasty. I just love seeing those pretty sunrises and the bald eagles! I hope you have a wonderful day, Joanne!

    1. We love spotting those bald eagles; despite their numbers making a remarkable comeback in our area we rarely see them.

    2. I have only seen a couple around our area, one bird we do see a lot is hawks!! We will spot three or so every car ride we go on!!

    3. We see quite a few hawks too. We had one land in our neighbors yard a year or two ago and it stayed there all day (eating and de-feathering a duck-- which was both gross and yet sort of cool at the same time).
