Easy and Delicious Lime Pie

For this month's Pinterest Challenge I just knew I wanted something light and summery to share.  When Alec made his Lime Pie for the second time in a month (at the request of family members!) I just knew I had to share the recipe.

Never having made a Key Lime Pie before we were inspired by this pin to try and make our own and while we made a small tweak here and there we have been told by several people now that this is the best Key Lime Pie they've ever tasted.



Not having used actual KEY limes I tend to call it a lime pie and not a Key lime pie but as I said, no one has complained!  (Even a few who told us that Key Lime pies are their favorite have told us they never had a better one!!).

We were making this pie for our family's 4th of July party and our grocery store was all out of graham crackers so we decided to use golden Oreos for the crust instead and that gave it a nice flavor boost.

Ingredients:
For the crust:
2 sleeves from a family pack of Golden Oreos
6 Tablespoons melted butter
For the filling:
2 14 ounce cans sweetened condensed milk
1/2 cup sour cream
All the zest you can get from 1 lime
3/4 cups lime juice (we squeezed some of our fresh and used jarred lime juice for the rest)
2 egg yolks
Whipped cream topping:
8 ounces heavy whipping cream
2-3 teaspoons vanilla extract
3-4 Tablespoons powdered sugar

First he crushed the cookies in the food processor and mixed with the melted butter.  Pressing into the pan and up the sides using his hands.  He then baked the crust in a 350 degree oven for 6 minutes.  Our crust shrunk just a bit when it was in the oven but I was able to use a spoon to press it back up the sides while it was still hot.  We then set it aside to cool while we mixed up the rest of the pie.

Using the bowl of the stand mixer he beat together the sweetened condensed milk, sour cream, zest, lime juice, and egg yolks on medium-high speed for 2-3 minutes making sure to whip the batter until it was thickened.

Now the first time we made this pie we used our deep dish glass Pyrex dish and we mixed up the perfect amount but using a disposable tin this time we had a bit left over.  Alec just poured until it filled up his crust (now fully cooled!).

He put the pie back in the 350 oven for 15-20 minutes until the center was set.


He let the pie cool at room temperature for 30 minutes and then set it in the fridge until the next morning.


He put the bowl from the stand mixer into the freezer while he ate breakfast and got dressed for the day.  We've found that having a nice COLD bowl makes for better whipped cream!

He put the bowl back on the stand, added in the whipping cream, powdered sugar and vanilla and whipping until he had nice stiff peaks forming. He put it into a piping back and decorated the top of his pie.


It was gone in moments!!

  7. Oh MAN, this looks good! Jacob's very favorite dessert is key lime pie, but I've never thought to make one myself! We've always gotten them from Publix. Now I want to try my hand at it!

  11. This looks delicious! May need to try it with some of the limes we receive from Misfits Market. Although may need to keep the sour cream ingredient a secret as hubby refuses to eat anything with sour cream in it (that and mayo) LOL.

    1. That's how we ended up making it!! I had so many limes and was searching for ways to use them up. I wonder how it would taste to substitute the sour cream with greek yogurt?

    1. Oh definitely! You could use graham cracker crust, Nilla wafer crust, I bet Biscoff cookies would make a great crust for this too.

  20. Okay, I am definitely trying this recipe! My husband and I love key lime pie so much (although we do prefer the meringue type which is really difficult to find in key lime instead of lemon).     1. I have never heard of key lime with a meringue topping; but like I mentioned earlier I had never eaten it until Alec began making them so I am definitely not any sort of authority.
