Encouraging Hearts and Home-- Summer Salads

When the temperatures begin to rise there is nothing I enjoy more than some freshly prepared fruit and vegetable sides to go with some grilled chicken or steak.  I was so happy to see so many tasty and healthy looking side dishes shared last week that I decided to feature them all this week.  Do you have a favorite salad recipe for the summer?  I'd love to hear all about it!

  1. There is so much negativity in the world and on the internet, it is really nice to have a friendly space gathering pleasant content. Thank you for sharing this!

    And I love salad in the summer. I think it's still been too cold in CT to really click into salad gear. I am all over the mixed berries, but I've only made a handful of big salads. Once we finally stay in the 80's, it will be salads all the way. I love adding a ton of different colors and textures. Gotta have something crunchy in there too!

    1. Oh I hear you on the weather; wearing jeans and a sweatshirt today! We've had a few nice sunny warm-ish days that are making me think of summer but I am starting to plan some salads anyway (much like I insist on wearing flip flops once the calendar says "spring" even if my toes freeze!). :)

  3. My husband loves a good salad on a hot day. Me...I could eat soup year round. Such a struggle to prepare meals that everyone likes.

    1. I enjoy a few soups in summer; like clam chowder but when it's really hot I enjoy eating something nice and cold and crunchy.
