Mashed Potatoes with Sour Cream and Chives

My mom never considered herself a good cook but there were some of her recipes that just killed everyone else's cooking for me.  Her mashed potatoes were one of those recipes.. I just never liked anyone's potatoes as much as hers!



When I was newly married I asked her how she made them and often helped out at Christmas or Thanksgiving when she was making them so I could learn.

They are so flavorful and aren't that hard to make either.  But since we always made them for a large crowd my mom's amounts were for a whole 10 lb bag of potatoes!

I have since played around with the amounts and added to the recipe a bit.  We now have a family favorite recipe that I prepare at least once a month in these cooler months.

To make a family sized batch of potatoes you will need:

6 lg russet potatoes; peeled and cut into bite sized pieces
1/2 stick butter
1/4 cup milk
1/4 cup sour cream
2 tsp. celery salt
2 Tablespoons dried chives
salt and pepper to taste

First peel, cut, and boil the potatoes until tender.  Then drain.


While the potatoes are hot add in the other ingredients and using a hand masher mash the potatoes (do NOT whip them!).  I make sure to scrape the sides of the pan down several times and keep mashing until I have a consistency I like.
