Quick and Easy Crock Pot Vegetable Lasagna Recipe

With our weather turning just a bit cooler and feeling like fall, I have been wanting to break out our crock pot and prepare some comfort food.


I love making lasagna and have always found lasagna to be so easy to prepare.  Using my crock pot makes it even easier!  In just a few minutes I have a meal ready to cook for the entire family.

I don't pre- cook my noodles; in fact with ALL the lasagna recipes I have ever made I have never once pre- cooked my noodles.  I use a bit more sauce and make sure there is enough liquid in the sauce to allow the noodles to soak it up as the rest of the lasagna also cooks.

Ingredients:

9 lasagna noodles
2- 24 ounce jars of sauce
14.5 ounce can diced tomatoes
1 Tablespoon Italian seasonings
15 ounces ricotta cheese (cottage cheese works great too!)
1/2 package of frozen spinach; thawed and drained of water
4 cups shredded mozzarella cheese
1 cup Parmesan cheese

First I mix up the two jars of sauce, diced tomatoes, and Italian seasonings together in a bowl.



In a separate bowl I mix together ricotta cheese, spinach, 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese.


Then I start layering my lasagna right into the bowl of my crock pot.

I start with 1/3 of the sauce mixture.  Making sure the bottom of the pot is covered.


Next I put lasagna noodles into the pot trying to keep them in a single layer; breaking when necessary.



I top the noodles with 1/3 of the ricotta mixture and 1 cup of mozzarella cheese.  


Then I begin repeating layers; sauce, noodles, ricotta, and cheese.



One last layer of sauce, noodles, ricotta and cheese and I'm ready to cook it.


Usually I cook my lasagna on low for 5-6 hours.  This particular day we were not going to be home at noon to start the crock pot so I decided to leave the crock pot on low for a few additional hours until we got home.

I was so afraid the lasagna would burn or else the noodles would turn to mush but it was just fine!



It is so easy and served with some garlic bread and salad makes a perfect meal for a cool night.

  3. I was just saying to Mum yesterday that I'm going to have a go at making a lasagne in the slow cooker. I love lasagne, but it can be fiddly to make. Slinging all the ingredients into the slow cooker before work and coming home to a ready meal is perfect. Pinning for future rference.

  6. I was recently at a family gathering and two of my cousins were talking about making lasagna in the crockpot. They both had tried it, said it was great, but I never had. So...all that's changing tomorrow night when i try a slightly different recipe from yours in the crockpot! Can't wait!
