Double Crisp Apple Crisp

I love apple crisp and while I do love warm, gooey, apples flavored with cinnamon and sugar I'm honest enough to admit that I eat apple crisp mainly for the crisp!

Over the years I found a favorite recipe but made it even better by doubling the amount of crispy topping.

I look so forward to making it each fall so you can imagine how crushed I was to discover that I had LOST the recipe!

I pulled out a few cookbooks, scanned through the ingredients and amounts and decided that I could probably recreate my favorite recipe.  I decided to give it a try.  Boy did it ever come out so incredibly yummy!

I wrote it down as I went so I would remember what I did and thought I'd share it with you today.

Doubly Crisp Apple Crisp

6 cups peeled and sliced Cortland apples
1/4 cup granulated sugar
1 1/2; tsp. cinnamon- divided
1 cup oats
1/4 cup brown sugar
1/4 flour
Pinch of nutmeg
5 Tbsp butter or margarine

Mix 1/4 cup sugar and 1 tsp of cinnamon together and coat the peeled apples with the mixture.  Spread them in an 8x8 or 9x9  Pyrex dish.

Pictured without the cinnamon/sugar mixture (I forgot to photograph that step)

In a separate bowl mix together 1 cup oats, 1/4 cup brown sugar, 1/4 flour, 1/2 tsp of cinnamon, and a pinch of nutmeg.  Pour evenly over the top of all the apples.

Thinly slice the 5 tbsp of butter of margarine and lay over the top of the oat mixture.

Bake at 375 for 35-40 minutes.   The butter melts into the crisp layer making it all brown and crispy!  The apples get all bubbly and caramelized with the sugar and cinnamon.

It's delicious topped with ice cream and whipped cream!
