Recipes We've Been Making Lately-- Late Summer/Early Fall 2026

I have been so motivated to try out lots and lots of new recipes! Most all of them were hits with very few misses too which is always so nice.

We loved this Easy Italian Sausage and Egg Noodle Recipe by Elenor's Dish.. and for once I followed the recipe nearly exactly-- the only thing I did differently was I used the entire (small) can of tomato paste and coconut milk.

I tried this Easy Homemade Pad Thai; it got mixed reactions. My husband and Evan loved it. Alec and I thought it was pretty good but Ian really did not like it.

We tried The Best Pizza Dough Recipe to make homemade pizzas one night. It was pretty good; though it was a sweeter and flakier crust than I'm used to for pizza dough. Alec and I were talking about possibly trying to use this as a pie crust replacement one day and see what happens.

We tried Holly's Mongolian Beef Bowls; though we omitted the sriracha sauce and served them with rice noodles instead of rice. We liked them. I think next time I would add mushrooms... and probably other veggies as that's just my go to with most meals.

I tried this restaurant-style pan seared salmon recipe for dinner; it was so quick and easy and it tasted great.

I made these flourless dairy free peanut butter cookies for Evan's birthday care package; I did add dairy free chocolate chips to them. Of course I had to try one before giving them to him and I thought they were oh so good. I did make mine slightly larger than the recipe called for and the last batch that I cooked longer seemed to be a bit better but I would definitely make them again.

My mom had been gifted a HUGE bag of free pears from one of her friends so we ended up with a bulging gallon size Ziploc bag of pears. I decided to try this pear pie recipe with a crumb/crisp topping. It was easy and oh so delicious.

we really liked the traditional pie crust bottom mixed with the crisp topping

We tried Holly's General Tso's chicken bake too and it was a big hit and so incredibly easy to make.

This roasted acorn squash recipe was delicious and oh so easy! I will definitely be making it again.

I wanted to make some homemade pie crust but recipe required shortening, which I didn't have, so I turned to the internet and found this all butter pie crust. It was easy to make and so easy to work with.

I made these simple no-knead rolls to go with our soup another night. They were simple and tasted SO good!

I saw this recipe for Italian drunken noodles and decided to give it a try. I only have one pepper (not two) and I added a few mushroom slices but other than that I followed it pretty closely. It looks absolutely nothing like the photos on the website but it tasted good.

  2. Your dishes look Devine! I sure enjoy Italian food. Cooking is an art. Unfortunately I do not have the patience. My dishes are rather bland. Now, my husband, makes delicious dishes.
Your pie looks really good. I’d add some ice cream with the pie warmed up!
    All the best.
