Recipes We've Been Making Lately-- Spring/Summer 2026

 It's been awhile since I've posted a recipe round-up post. We like to try new recipes every now and then and I always try to keep track of those we've made. Sharing them on the blog helps me remember what we liked and didn't and the changes we made too. Hopefully it gives you some delicious dinner ideas too. 

 


We made a version of these tender air fryer chicken nuggets with honey garlic sauce-- only I kept ours as tenderloins and avoided cutting them into nugget pieces.  They were good! 

 

I tried this lemon chicken with sugar snap peas (though we used pea pods)-- it was delicious! 

We then tried this Lemon Herb Grilled Chicken recipe-- basically I've been trying to recreate a marinade and chicken combo I made while on vacation in Utah just by mixing some basic ingredients together I had on hand. This recipe came real close though I did add some balsamic vinegar (about 1/4 cup). 

I forgot to buy dressing for Evan's grad party so on top of my favorite basil vinaigrette I made this Thousand Island dressing recipe. I did used dried onion and bumped the vinegar up to 1/2 Tablespoon just to try and thin it out a little as it is a very thick dressing. But everyone said it was yummy.

 

This one pot meatball orzo bake is one of those times I barely even loosely followed the recipe. I didn't measure much of anything and since I didn't have even a cup of orzo I subbed out a full box of rotini, used precooked/mashed eggplant in place of the broccoli and could only find tomato sauce not puree... but it still came out pretty good. I'd like to try it again and actually follow the recipe in its entirety next time.  

We also tried this lime marinated grilled chicken for dinner one night. I did omit the cilantro though as none of us are cilantro fans. I let the chicken marinate for 6 hours before cooking. It had really good flavor... even if I did end up having to put it the air fryer when a thunderstorm tore through just as I was about to light the grill. 


  I made these blondies for the 4th of July using 1 cup chocolate chips and 1 cup patriotic M&M's. They were a HUGE hit!


Alec was bored one day so decided to make a coconut cheesecake-- using this recipe then decided to whip up  a half batch of this almond meringue which he piped on top with a large star tip before using the blow torch to toast it like a creme brulee. Lastly he melted some white chocolate chips with a bit of coconut oil and drizzled it over the whole thing. 

We made this Lo Mein recipe for dinner one night. I used bok choy, mushrooms, peppers, & onions and did double the recipe to feed us all. It was easy and delicious. 


 We made this easy beef and broccoli dish with rice noodles for dinner another night. I did double the recipe but otherwise followed it pretty exactly. My husband and I thought it would benefit from some added mushrooms but other than that is was pretty tasty and definitely easy.

    1. We're slowly trying to get my husband and Ian on board with more than just American cuisine and so far most Asian dishes have been a hit. Thanks for the suggestion.
