And just like that May is nearly over which means it's time to link up with Shay and Sheaffer for What's Up Wednesday. It should be no surprise to anyone that this wrap up is going to have lots of Utah trip photos! While it was only the first week of the month it felt like it filled our month.

What We're Eating:
Monday: Chicken fajita rice bowls with salad
Tuesday: This chicken couscous with lemon that I've made before probably with zucchini just like last time too.
Wednesday: Crock pot Korean beef bowls over rice noodles (instead of rice this time)
Thursday: Chicken pesto sandwiches with chips and salad-- a new recipe I'm making up as I go.
Friday: Alec and I have tickets to see The Lion King in Providence so the rest of the family is on their own.
Saturday: Homemade grilled pizzas and salad.
What I'm Reminiscing About: It's been 25 years (this week) since this happened.. boy time sure does fly by.
What I'm Loving: It's finally deck/patio season (well, some of the time anyway).
What We've Been Up To: We started our month in Utah visiting all 5 national parks, then came home to lots of green and blooms and nature time.

What I'm Dreading: Not really dreading because I am so excited for him but I am definitely anxious about Alec leaving for Greece next month.
What I'm Working On: Between making sure we're getting everything done/checked off for Evan's freshman year of college (like final grades, health forms, filling out housing questionnaires, etc) and making sure Alec is all set for Greece (with clothes, Euros, an international phone plan, figuring out what to do with the jury summons that intersects with his trip, etc.) I have felt flat out trying to remember/deal with all the contingencies. They're adults, sure, but they definitely can't handle everything all on their own either.
What I'm Excited About: My husband and I leave for Maine this weekend and I am really excited to have a vacation just the two of us.
What I'm Watching/Reading: Revenge (Hulu), Project Hail Mary (at the Movies--technically at the end of April), Drunk Parents (Hulu), Remarkably Bright Creatures (Netflix), RJ Decker (Hulu), Greenland 2 (HBO), Celebrity Jeopardy (Hulu)
I read/listened to 16 books this month!

What I'm Listening to: Lots and lots of audiobooks.
What I'm Wearing: Since our weather either seems to be in the 90's or the 50's & 60's I've worn a weird mix of fall and summer clothes.
What I'm Looking Forward to Next Month: Evan's graduation (I mean technically we've been done school since the end of April but we have a small grandparent party [his request was to not have any party!] planned for June). Seeing Alec off on his trip to Greece.
What Else is New: My parents have arrived for the summer-- they moved into their summer digs while we were in Utah. It's nice seeing them so often again.

ReplyDeleteThank you! It helps that he's going with a large group of 20 or so. I think that's perfect for his first abroad experience... and hopefully that will make me less nervous next time. As I know he has big plans to travel a lot.

I know you're loving this season that you're in...both literally and figuratively. And yay for Mom and Dad being close by again! I'm sure you miss seeing them when they're in NC.
