What's Up Wednesday in April, 2026

Can you believe it's the last Wednesday of the month and time to link up with Shay and Sheaffer for What's Up Wednesday?

What We're Eating:

Sunday: Egg roll in a bowl

Monday:Burgers, cole slaw, fries, and salad

Tuesday: Korean beef bowls with rice noodles and salad

Wednesday: Sweet chicken chili wraps with salad

Thursday: Zucchini & chicken pasta with wine sauce (regular pasta, chicken and sauce for the boys)

Friday: BLT sandwiches with BBQ macaroni salad and salad

What I'm Reminiscing About: This guy turned 22 last week-- 22!

And this guy is officially done with this second year of college today. The time is just flying by and I have seen so much growth in him since we dropped him off Freshman year (both literally and figuratively).

What I'm Loving: This month I really loved getting to use Evan's employee discount at Michael's. I bought lots of new canvases, some new brushes, some more envelopes for all my cards, etc.

What We've Been Up To: I had such a fun month! The highlight was, of course, my trip to Asheville!

Evan and I also toured one more Newport mansion-- Kingscote

What I'm Dreading: Travel days.. I don't so much mind airplanes or the time spent in airports but the anxiety to get there is just awful. I have never had any problems with TSA and yet the relief I feel when I am past that point is uncanny. Then I tense up just as it's time to board and I relax again until we land then stress about making it to our connecting flight... it's a lot. And while no one that travels with me really picks up on it I FEEL it & it's exhausting.

What I'm Working On: So very much! I wrote out a daily to do list starting on the 20th and ending on the 2nd. I've been working my way through each day crossing off everything on my list-- cleaning the whole house, setting concrete plans about our Utah trip, prepping for & celebrating Ian's birthday, getting Alec moved home from college, making mother's day cards and buying gifts, making grad cards & getting gifts, getting my brother ready to move out, etc. It's been a whirlwind couple of weeks but totally worth it.

What I'm Excited About: Our vacation is so close and I can not wait to explore 4 MORE national parks! Hopefully by the time we're back it will have finally warmed up here and I can pull out all the patio/deck furniture and spend more time outside.

What I'm Watching/Reading: Greek (Hulu), the old Night Court (Prime), Memory of a Killer (Hulu), we're re-watching The Big Bang Theory (Hulu),

I read/listened to lots of great books this month:

What I'm Listening to: I'm actually on the search for a new audiobook as I don't have one going currently but tend to enjoy listening on the plane ride (for whatever reason I can't concentrate on my reading anymore when we fly but I can listen!)

What I'm Wearing: We had one or two warm. nice days this month but mostly it's still been pretty chilly so I'm still wearing all the long sleeves, pants, and sweaters.

What I'm Doing This Weekend:  We leave for Utah!

What I'm Looking Forward to Next Month: Our trip, my parents will be here, Alec is home, my husband and I celebrate our 25th anniversary, Alec and I have tickets to see The Lion King... it should be a fabulous month!

What Else is New: Alec moves home today. Fingers crossed my brother moves into his new rental house this weekend too. It's supposed to be all ready for him on the 1st.

  2. I can relate to the travel stuff! I think it's because I'm the planner and it all falls on my shoulders. From what time to leave for the airport, the tickets being correct, flights running smoothly - yes, I get it!
You have so much good stuff this month! Alec ends his school year early! It's so nice you can travel before others are off for the summer and maybe before the weather gets too warm? Can't wait to hear about it. Try to take deep breaths and enjoy!

    1. Yes! I feel like it's all one me too. And with airlines becoming more and more unreliable I worry more and more. Yeah, it actually sounds rather cold in some areas of Utah right now.

  7. That Egg roll in a bowl looks so good and your coleslaw too!
Happy birthday to your boy and congrats on the completion of college. My youngest has a couple of months left until she is finished with college. Eek!
How great to have Evan's discount for all the painting and craft supplies.
Sorry you are struggling with traveling, I feel the same whenever I travel so that's why I don't do it often.
It sounds like things are busy for you at the moment. Have a fantastic vacation.

    1. Aw, thank you! I refuse to give up travel but would much prefer to plan trips around driving or direct flights in the future.

  9. Good luck with all the moving! I also prefer an audio book for the plane. Then I can close my eyes and rest while I listen. I just picked up The Perfect Divorce on audio because it was available and I didn't have any holds ready.

    1. Yes, I close my eyes and just listen and rest. I haven't listened to The Perfect Divorce as I really, really detested The Perfect Marriage-- you'll have to let me know what you think when finish it.

  10. And I am similar with the travel anxiety. Once I am sitting at the gate, I'm ok, but until then I'm a bundle of nerves.

    1. It's so weird and I hate that I stress so much over all these variables that I literally have zero control over anyway!

  11. What a great month you've had, Joanne. I always love catching up with what you've been up to in these What's Up Wednesday posts. I know you will have a great time in Utah. We are so lucky to have multiple National Parks and countless great hiking areas in our state. Travel safe!

  12. Two years of college. It seems like just yesterday he was applying! You've been loaded with "busy" but so very much of it looks fun. And more to come with your parks!

  13. I don't travel anymore, but when I did, I felt the same way about it. It was even worse when I started having to take so many medications along because I was always afraid they wouldn't believe me what it was (despite a doctor's note).

    1. Yeah, we got stopped for my son's medication a time or two and I always wondered if they were going to let us keep it!

  14. That's such a bummer about your travel anxiety...there's so many issues nowadays...I totally understand.

    1. Aw, thanks! I don't think I was ever really calm about travel but it definitely seems to be worse (especially since our disastrous North Carolina trip earlier this year).

  15. I am not the person to get anywhere early...unless I'm traveling. Then, I want to be there early, checked in, and relaxing (as much as I can) until time to board. I hope you have a wonderful time in Utah! I admire you for going to all these National Parks!
