Recipes We've Been Making Lately: Winter/ Early Spring 2026
We have been trying out some really yummy recipes these past few months!
We tried this better than take out cashew chicken one night with some rice; none of us have ever had cashew chicken and cashew chicken take out isn't a possibility here but we enjoyed it all the same.
We tried these 30 minutes rolls another night and they were pretty tasty!
I tried this family favorite boneless pork roast; I used dried herbs and added potatoes around the roast while it was cooking. I forgot to snap a photo of it finished but did snap one before it cooked. We all thought it was really tasty.
We made these oven baked boneless beef ribs while in North Carolina and they were delicious (though we did omit cumin since I don't really like that spice)! Next time I think I might try the crock pot variation they mentioned at the end of the blog post.
We made this honey garlic turkey but in all honesty this recipe is a hot mess. I used the ingredients but made it my own. Rather than cutting the cutlets into bite sized pieces I made cutlet sized portions and just poured the honey/garlic sauce on top (after I boiled the cornstarch slurry in). I also dipped the cutlets in the flavored flour, then the egg, and added a layer of panko crumbs for a bit of crunch before pan frying.
We tried these sweet chili chicken wraps for dinner one night; we used chicken tenderloins instead of slicing it into strips & I had mine in a pita instead of a wrap but everyone else used a wrap. We also omitted the lime and cilantro but they were still very tasty (also some people did not use the shredded lettuce and carrot and cucumber but I like meals like this that can easily be adapted to each person's taste).
Alec made this strawberry cheesecake for "fun" over his spring break. It was delicious!
I whipped up this basil & balsamic marinade for pork chops one night; we did bake ours in the air fryer instead of the grill but it was still delicious. We liked it so much I've actually made it a few times (once with dried basil since I didn't have fresh on hand).
I made this pistachio cake recipe for St. Patrick's day; I couldn't find raw unsalted pistachios already unshelled so I used salted ones but omitted all other salt from the recipe. I also used canned full fat coconut milk with 1 Tablespoon vinegar in place of the buttermilk and omitted the food coloring entirely. It was the fluffiest cake batter I've ever whipped up. I didn't try the frosting though as we all wanted plain vanilla frosting.

We made this easy boneless turkey breast for dinner one night. I did add a bit of tumeric but otherwise just followed the recipe. It was delicious.... but I forgot to photograph it!
My husband loves orange chicken and while I typically make my own homemade sauce he found a jar of it at the grocery store he wanted to try so I used this How to Make Orange Chicken with Panda Express Sauce recipe one night for the family. After quickly crisping the chicken in the oil I finished baking in the oven on a tray then added shredded carrots and pea pods to the sauce.
I have made homemade English muffins a couple of times this time I used this recipe by Long Bake the Queen and they were so easy and delicious (and I really liked that they are dairy free as many use milk).
I mixed up this simple balsamic vinaigrette one night. It's yummy!
I made this turkey tenderloin marinade. I let the tenderloin marinate for 4 hours and then followed the cooking instructions exactly (thought it did take several extra minutes before ours reached the correct internal temperature). It was delicious.

So many great looking food pics! I will check out a lot of these recipes. The cashew chicken recipe is the one that I use- it's a family favorite. Alyssa loves orange chicken from PE. I don't think I realized you can buy the orange sauce from the store. I'll have to check that out. Thanks for all these links to recipes and photos :).

DeleteYour English muffins look so professional! You have been cooking up a storm. I have kind of lost some of my inspiration for cooking this week - and maybe last week, too. I have got to find it again, I guess. I am wanting to eat lighter and introduce lots more vegetables. Today I am going to try to roast some zucchini and onion.
ReplyDeleteAw, thanks! I like that I can make them slightly smaller than the standard size so they're less WW points and less filling but I still feel like I get to have bread with my eggs.

ReplyDeleteTwo of us are lactose intolerant so I'm looking for more and more recipes that don't use dairy or chemical based substitutes (I'm okay with things like almond milk but I won't use things like nondairy cheese where I often can't even read the ingredient list).
DeleteThis is making me hungry! I made English muffins once and they were surprisingly easy. I need to do that again!
