Our Family's Egg Roll in a Bowl Recipe

 I first saw an egg roll in a bowl on Holly's blog and we followed her recipe exactly but as time went on I started adding other things to our recipe so while I'm sure it's not really an egg roll in a bowl recipe with our additions the name stuck. We do like the addition of more fruits and veggies and I hope you do too! 

 


Ingredients: Makes 4 very large servings if eating by itself 6 servings if you serve it over rice.

1.3 lbs ground lean turkey (or beef/chicken/tofu crumbles)

1 small onion; chopped 

2 cloves garlic; minced 

1/2 head of cabbage; shredded (about 6 cups)

1 cup shredded carrot

2 cups pineapple chunks

1 cup sliced mushrooms 

1 handful pea pods  

2 Tablespoons soy sauce or coconut aminos

1 Tablespoon ginger

1 pinch of red pepper flakes or 1 tsp hoisin sauce

 

Optional cooked rice to serve it over

 

First I cook up the ground turkey with the garlic and onion until the turkey is cooked through and the onions are nice and soft. 

Then I add in shredded cabbage, fresh pineapple, pea pods, and even some mushrooms. I give it a good stir.  

 


Then I add in all the seasonings: the ginger, the coconut aminos, the red pepper flakes or hoisin sauce. 

I almost always serve it with/over some sort of rice or riced cauliflower; though I am perfectly happy to eat just the "filling."  

The filling by itself is zero points on weight watchers for 4 servings. So with a cup of rice it's just 5 points for the whole meal. It's very filling too.

    1. I think it's named that way because it takes what would be the filling of an egg roll and uses just that as a meal... but I've honestly never eaten an actual egg roll so I'm not entirely sure!

  3. I first started making egg roll in a bowl based on Holly blog as well! I have found a few other recipes for it online and have tweaked the original recipe some. I like all of your additions, especially the pineapple. I may just have to try yours!

  4. I made this so much a few years ago! I love your additions and that might make me want to make it again. I also overdid the burrito bowl - lol. I love pineapple in Asian and Mexican dishes for some reason. So good!

    1. We tend to eat a lot of the same meals in a short time span and get sick of it as well. Then years later I'm like why did we stop eating that? It was so good!

  15. This is very similar to one of our favorite dishes, too! It's become one of our go-to meals at home and we sometimes substitute beef or shrimp. Delicious!

  19. I love egg roll in a bowl. I cheat and buy the cole slaw mix. It's just so much easier than all that chopping!

    1. I use my food processor so it just takes minutes to slice/shred everything up but I know most people buy the cole slaw mix.
