Grilled Chicken Pesto Sandwiches

 Today I'm actually sharing 2 posts; the yummy recipe below for a delicious dinner sandwich and this monthly musings posts all about our family vacations. 

We've been trying out lots of new recipes lately. I saw Tanya mention a chicken pesto sandwich on her blog and thought I'd try to come up with one of my own. I figured it might be something everyone in the family might actually eat. 


 Ingredients:

1/2 jar of prepared pesto (about 4 ounces)

1/4 cup olive oil

1/4 cup balsamic vinegar

5-6 chicken breasts

5-6 rolls

Remaining pesto (though I didn't use it all) 

Balsamic glaze 

lettuce 

1 large tomato; sliced

5-6 slices fresh mozzarella cheese

 

Directions: 

Earlier in the day I mixed together pesto, balsamic vinegar, and olive oil to make a marinade. I put the chicken in the marinade and set it in the fridge for a few hours. Don't worry about getting the measurements perfect; this is a very forgiving "recipe."

I heated the grill to 350 and put the chicken on it.   


While it was grilling I split the rolls, spread some more pesto on them and gave them each a drizzle of balsamic glaze. 

I then put some lettuce and tomato slices on (I wish I had had large tomatoes instead but I made do).

Once the chicken read 165 on a meat thermometer I put a slice or two of mozzarella on each piece and left it to melt. 

Once melted I put a piece of chicken in each bun. 

 

The whole family loved them!


My oldest suggested that next time we try adding some bacon.. and I have to agree that sounds pretty good too!
