Cucumber and Tomato Salad

We got such a huge bounty of cucumbers from our CSA boxes last summer that by summer's end I was searching for any and all recipes that use cucumbers. I knew I wanted to try a cucumber and tomato salad but didn't find a recipe I really liked... so I combined a bit of this and that from several recipes to make up my own. 



 Ingredients:

2 Large cucumbers; sliced (approx. 5-6 cups)

8-10 small tomatoes halved or quartered

1 cup mayo

1 Tablespoon apple cider vinegar

2 Tablespoons dill

1 Tablespoon minced onion

1 teaspoon garlic salt

1 teaspoon celery salt

To make:

1. In large bowl combine cucumbers and tomatoes. I peeled some skin off our cucumbers but did leave some bits of skin on them. 

2. In small bowl combine mayo, vinegar, dill, onion, and both salts then pour over cucumbers.


3. Mix until cucumbers are well coated. Serve cold. 


I thought these flavors all worked so well together!

    1. I rarely think to focus on just one or two vegetables either; we almost always have a full green salad but I'm trying to branch out more and try other varieties.

    Oh, we make this as 2 different versions and love it.
    1-We use yogurt instead of mayo (because most mayo is a lot of oil and Rob can't have any soy)
    2-My grandma used to make it with just vinegar and water, and we do that a lot too.

    1. I definitely can not use yogurt in place of mayo; I've tried that a time or two but then I'm the only one eating it... but I would definitely try the just vinegar and water variety!

  7. I love cucumber tomato salad. I make mine without mayo as our family doesn't eat mayo. Dill is a must in mine too :)

  9. Very nice, dill goes good with cucumbers. They are a great natural diuretic and healthy. Years ago while doing chemo for breast cancer, I had issues with edema, swelling during the second round. I added a cucumber to the carrot/orange/apple blend I was juicing daily and it was a big help. The site "simply recipes" has a great cucumber herb tahini salad recipe you might like, goes great with barbeque.
