Cucumber and Tomato Salad
We got such a huge bounty of cucumbers from our CSA boxes last summer that by summer's end I was searching for any and all recipes that use cucumbers. I knew I wanted to try a cucumber and tomato salad but didn't find a recipe I really liked... so I combined a bit of this and that from several recipes to make up my own.
Ingredients:
2 Large cucumbers; sliced (approx. 5-6 cups)
8-10 small tomatoes halved or quartered
1 cup mayo
1 Tablespoon apple cider vinegar
2 Tablespoons dill
1 Tablespoon minced onion
1 teaspoon garlic salt
1 teaspoon celery salt
To make:
1. In large bowl combine cucumbers and tomatoes. I peeled some skin off our cucumbers but did leave some bits of skin on them.
2. In small bowl combine mayo, vinegar, dill, onion, and both salts then pour over cucumbers.
3. Mix until cucumbers are well coated. Serve cold.
I thought these flavors all worked so well together!

This looks like a great summer combo! I will have to try it!

DeleteYum! I love the sound of this. Cucumbers and tomatoes are my favourites and never thought of just having those in a salad.
ReplyDeleteI rarely think to focus on just one or two vegetables either; we almost always have a full green salad but I'm trying to branch out more and try other varieties.
DeleteThis sounds good!
ReplyDeleteThank you!
DeleteI love salads like this - my hubby hates anything with mayo in it - i always need to make me small batches of these yummies
ReplyDeleteI have 2 non-mayo eaters too but luckily my husband isn't one of them.
DeleteI am making this! It looks delicious! Such a perfect summer side.
ReplyDeleteSo glad you think so! I hope you like it.
DeleteYum! Thanks so much for sharing Joanne :)
ReplyDeleteYou're welcome!
DeleteOh, we make this as 2 different versions and love it.
ReplyDelete1-We use yogurt instead of mayo (because most mayo is a lot of oil and Rob can't have any soy)
2-My grandma used to make it with just vinegar and water, and we do that a lot too.
XOXO
Jodie
I definitely can not use yogurt in place of mayo; I've tried that a time or two but then I'm the only one eating it... but I would definitely try the just vinegar and water variety!
DeleteI love cucumber tomato salad. I make mine without mayo as our family doesn't eat mayo. Dill is a must in mine too :)
ReplyDeleteWeirdly I rarely like dill but it works so well with this salad.
DeleteI love everything in this salad. Consider it saved!
ReplyDeleteOH good! That makes me very happy.
DeleteVery nice, dill goes good with cucumbers. They are a great natural diuretic and healthy. Years ago while doing chemo for breast cancer, I had issues with edema, swelling during the second round. I added a cucumber to the carrot/orange/apple blend I was juicing daily and it was a big help. The site "simply recipes" has a great cucumber herb tahini salad recipe you might like, goes great with barbeque.
ReplyDeleteThat does sound yummy; we have started using tahini a lot with making granola and granola bars but I hadn't thought much about using it in salad. I'll have to check that out. thanks for the suggestion.
DeleteI love cucumber salads and this one looks like one my family would like. Thanks for the recipe.
ReplyDeleteYou're welcome!
DeleteThis sounds delicious and a lot like what my mom used to make except she'd use onions instead of tomatoes.

Yeah, no one in our family is a fan of raw onion so we tend to leave those out of any cold salads.
DeleteJoanne,
ReplyDeleteThat looks really good!! Thanks so much for taking the time to stop by!!

DeleteThis looks delicious and a different spin on the cucumber salad I'm used to!
ReplyDeleteI had never seen or had a cucumber salad before.
DeleteOhhh, I want to make this!
ReplyDeleteI can't wait to make it again; hopefully it won't be too long until we have some fresh cucumbers again.
DeleteThis looks delicious! I can't wait to make this with fresh cucumbers and tomatoes from our local farmer's market! Thanks for sharing!
