Recipes We've Been Making

 I started this fun series during the pandemic when we were trying lots of new recipes... and I kept it going for quite awhile posting a new installment every few months. We love to try new recipes! 



My mom loves lemon desserts so for her birthday  I tried out this Lemon Tiramisu recipe; doubling nearly all of the ingredients so I could make a deep 13x9 pan size dessert big enough for a crowd. Even those of us that aren't real lemon fans enjoyed it.

We made these Easy 30 Minute Dinner Rolls; once for Christmas day and again in February to go with our soup.  They are so light and fluffy and I love that they only take 30 minutes! 


Alec wanted a raspberry Oreo cheesecake and we found this wonderful recipe to try; it was a lot of work but so incredibly amazing. 



I wanted to use up some ham we had in our freezer so I took this ham and cheese slider recipe and made some full sized sandwich rolls using spiral ham-- it was SO good! And I don't even LIKE or usually eat ham. 


I made Jennifer Aniston's salad recipe as Holly shared it here; only tweaking the amount of onions (and honestly I should have omitted them altogether as it was the only part of the salad I didn't like).  I did use just 1/2 of the dressing but found I liked that dressing equally well on other salads!  I do wish I had kept the nuts out and just sprinkled a few in each time I ate it because they lost their crunch by the next day and I really missed that added texture. But it was good. 


We LOVED this classic orange chicken recipe by Homemade on a Weeknight even though I didn't have the sesame seeds, green onion, or red pepper flakes.  It was delicious and made enough for us all to eat plus have 2 servings the next day too (we used 3 large skinless, boneless chicken breasts cut into bite sized pieces).  I did keep a 13x9 tray in the oven heated to 350 and kept each batch warm as I cooked up the next.  


We LOVED this Easy Baked Cod Recipe with Lemon and Garlic (though we did use pollock instead of cod).  I've already made it a few times now. 


I tried this recipe for an oil free homemade granola and used 1/2 peanut butter/ 1/2 tahini for the tahini, pecans for the nuts, pumpkin and flaxseeds for the seeds and added in the optional coconut flakes and topped it off with a few chocolate chips in the end. It's delicious! 


Evan made his own vinegar-based bbq sauce following this recipe; we did double it and decided rather than letting all the ingredients sit at room temperature for several hours to bring it all to a boil in a small sauce pan and then cool back to room temperature. It was spicy but all the BBQ fans in this house seemed to like it.

  13. All of these look great, especially the lemon tiramisu! And the granola, I might have to try. I've never made it before but usually have it regularly so a homemade version would be nice.
