Recipes We've Been Trying Lately

It has been over a year since I've shared some of the recipes we've been trying.  This is a series I started a few years ago and it helps me when I want to re-make a recipe we found online that we really enjoyed. It saves me from having to search through all my Pinterest pins again.



I swear we don't only eat desserts in our house; but it turns out that many of the new recipes I search for tend to be for sweets.  Here are a few we've been trying these past couple of months. 

1.  This blueberry banana bread-- though at the last minute I did add in just 1 cup of white chocolate chips!  I can't seem to find a photo of it but I know my husband and Ian gobbled it right up!

2. My family LOVED these s'mores bars we made for our cookout in August.  I didn't have mini marshmallows like the recipe called for so I just used my kitchen scissors to cut the large marshmallows I had on hand into 4 pieces and used those. 


3. We whipped up a batch of these cookie bars (though I did use 1/2 cup chocolate chips, 1/2 cup butterscotch chips, and 1/2 cup white chocolate chips and no nuts).  They were another bit hit at our cookout.




4. I made some 7 layer bars.  I hadn't had these in ages but they are a big favorite of mine! I swapped out the nuts for a layer of M&M's in the hopes that everyone else would eat them to and it worked.  I was surprised since my boys rarely eat anything with coconut.


5. We were given lots of leftover watermelon and that is one fruit that my boys really don't enjoy so we started looking for something to make with it and found this recipe for 2 ingredient watermelon sherbet though I did have to add some powdered sugar and white chocolate chips to sweeten it up a bit for my boys since it really just tasted like frozen watermelon otherwise and they wouldn't eat it. Once sweetened they gobbled it right up.  


6. We made this delicious Tomato Spinach Chicken & Pasta dish from Comfort Spring Station though I did sub out cooked broccoli for the spinach since none of my boys like cooked spinach and marsala cooking wine for the red wine since that's what I had on hand.  It was so delicious!! 


7. This easy baked chicken cacciatore was easy and delicious! The only thing I did differently from the instructions was to cook the veggies for the full 40-50 minutes as well since I don't like my onions and peppers crunchy. 


8. I've been looking up various recipes for cooking in the crock pot. We tried this mashed potato recipe and while I drained the broth before mashing and added chives, celery salt, etc. to the potatoes when mashing the basic cooking methods and amounts were the same.

  1. It all looks so good! I bet you miss baking those delicious treats! I hope your oven is fixed soon. I am really into whole wheat pasta dishes. I just made lasagna soup yesterday with cooked spinach (sorry to your kids!) and whole wheat rotini noodles. Yum!

  2. I like the idea of posting links to recipes that you enjoy- it helps you in the future and others! I do the same thing periodically. Everything you made looks good. Like you, I enjoy trying a variety of new recipes from desserts to healthy dishes. Thanks for sharing the links and info about the recipes you tried.

  4. Seven layer bars are great, you can add just about anything you have on hand. This is a great idea to post your recipes here on your blog.

    1. Yes, it seems to be a well- received series. It's just not easy to always remember to take photos. I try to keep a post going and link the recipe as soon as we try it.

    1. It was delicious! The hardest part was getting the frozen chunks of watermelon to blend well (I recommend working in small batches).

    1. You're welcome! We had a large family gathering at the time with aunts and uncles up from North Carolina and Florida and those bar cookies were the way to go. So easy to prep and combined fed a decent sized crowd!
