Encouraging Hearts and Home: Bunch of Bananas
While I personally do not like bananas we almost always have a few bunches on our counter. Rarely do we have any that go bad but when we do my husband and older son beg me to bake with them. Typically I make our favorite banana bread but a few new recipes caught my eye at last week's party! What do you like to do with over ripe bananas?

ReplyDeleteI seem to be able to taste the smallest bit of banana in anything so I tend to avoid all things banana.
DeleteI am not a fan of eating plain bananas either but we always have bunches of bananas lying around, too! When they get too ripe, I peel them and freeze them to use in shakes and smoothies or for baking. In fact, I just froze a whole bunch yesterday and might bake banana nut muffins this weekend.

My oldest thought he was saving old bananas for me-- but forgot to put them in the freezer and they just molded and sort of melted to the counter! LOL.
DeleteI like to make banana bread or banana muffins (same recipe) with old bananas but sadly sometimes I wait too long and they are too old then!! I also like to cut them into cooked oatmeal or add to plain Greek yogurt. I'd love to try banana pancakes. Sounds delicious!

DeleteBananas are one thing I had to say good-bye to after "going keto" - and one of the (few) things that I actually miss. And so many good banana recipes today!! Sigh.
ReplyDeleteAw, I couldn't imaging giving up some of my favorite fruits. I did go years without eating them because of the natural sugars but I am so glad I found an eating plan that works and allows me to enjoy them again.

DeleteI always save over ripe bananas in my freezer. They can go right into the batter while cold. My granddaughters like banana bread with chocolate chips added, while we like it with nuts, so I always make two loaves at a time.
ReplyDeleteYep, I like to do that too and I also tend to make two loaves (we usually freeze one of those too!)

I keep thinking I will like banana bread but then I take a taste... and nope! We do buy 2 or sometimes even 3 bunches a week though as my two banana eaters tend to eat 2 a day! I don't know how they can stand to do that...

DeleteWe love bananas around here, but my husband loves them the most when they're going bad!
