Weigh- In Wednesdays: How I Food Prep for the Week

I find one thing that helps tremendously with eating healthy is to prep as much food as I can ahead of time so when I'm hungry and wander into the kitchen it's easier to make healthier choices.  That means that at least once a week I am in the kitchen prepping food for the week (usually right after grocery shopping). 


I hard boil a dozen eggs each week and usually mix up a crustless quiche too; I like the quiche best but my husband prefers the portability of hard boiled eggs.  Truth be told I sometimes eat them for afternoon snack but only on days I haven't already eaten eggs. 


I cut up most of our fruit right away.  We always have 3 containers stacked up in the fridge; one with fresh pineapple (it takes 2 pineapple to fill so I leave two uncut in the fridge); one with grapes (typically it takes 1.5-2 bags to fill); and one with mixed berries (2 lbs strawberries, 1 container of blueberries, and 1 of either raspberries or blackberries).  Then about 3 days later I have to repeat the process. 




It is so worth it to enjoy a huge bowl of fresh fruit with yogurt and granola each day (and yep, I pretty much eat one of these bowls a day!)




I also ALWAYS have a huge bowl of salad made. We eat it with most of our dinners and I often have it for lunch as do my two older boys (well they have a small bowl with their lunch).  You can read all about what I put into that bowl in this post here. 





This little bit of prep work allows me to eat lots of fresh fruits and veggies all week long with little hassle.  I also make sure we always have diced/ cooked chicken on hand for quick meals I can grab and go; often that means grabbing a bag of precooked/ sliced chicken but you could easily cook up a batch and slice them all in one day and even freeze some for the following week. 




I often combine a bunch of veggies-- usually zucchini, summer squash, mushrooms and onions-- and either sauté them or roast them in the oven so I have a quick side dish of veggies prepped.  This week I threw in some butternut squash too!  I like to eat this veggie mixture with my quiche or as a side dish for lunch with a Boca patty or some leftovers from dinner.

  3. I try to write down the week's dinner plans at the beginning of the week, and due to severe food allergies I have to figure out my snacks ahead of time, but that's about it. Nothing like you though! What you do is incredible and everything looks delicious!

    1. I menu plan as well but try to just plan dinners and I plan out the whole month in advance.

  4. I always snack on an afternoon and have been trying to stick to fruit or nuts instead of cake and crisps. It is so much easier when I have fruit already prepped.

    1. Yes, me too; fruit or veggies only when I'm hungry in the afternoon but it's hard since that's when I crave crackers and carbs the most.

  5. All of your yummy healthy food is inspiring me to do more food prep for each week! I have a hard time justifying the time to do it, but I know it would be well worth it in the long-run. Everything looks so delicious!

    Good for you!! My problem is I eat too little and because of that, I have thrown my metabolism into a state of almost no metabolism. I have been told that I am in a state of starvation so my body holds on to every single calorie so I gain weight at the drop of a hat...I can not eat fruit and veggies because of my IBS. I also have Hashimoto' s so I have a terrible time not gaining weight....I exercise regularly to no avail....But it is what it is.....Thanks so much for stopping by!!

    1. I used to eat way less and found that I too was not eating enough food so my metabolism was all out of whack.
