What's Up Wednesday on a Tuesday: February 2022

I was going to skip this monthly wrap up altogether this year since I am taking Wednesdays off from blogging but I just could not resist putting together this fun look back at our month.  I rely on these posts myself when I'm trying to remember certain highlights of our year so I decided I'd just post my What's Up Wednesdays a day early this year... even if they are a bit redundant with my Friday Favorites and One Sentence a Day posts.
What We're Eating This Week:
Pulled beef sandwiches with chips and salad (we had leftover pot roast and this is a new way we tried to use it up.

Homemade pizzas with salad

Tuscan chicken pasta with salad

I made a crustless quiche with asparagus, mushrooms, and ham.

What I'm Reminiscing About: With Alec earning his black belt last week I am reminiscing about when we first joined his homeschooling karate class.  We had already been taking lessons at a rival dojang but we loved this homeschooling class so much that Alec followed his teacher when she was finally ready to open her own studio.  We figured out that he has been training with her since 2014!

He now towers over her!

What I'm Loving:  Our new furniture! We finally got the furniture in for the basement that we had ordered back in Sept.  It looks lovely and is so comfy by the very first night we had moved the TV and Xbox down there and snuggled up with blankets by the heat of the woodstove to watch TV together.

What We've Been Up To: Playing games and putting puzzles together, we finished our basement, went on a few RZR rides in the snow, have been teaching Alec to drive, and hiking whenever the weather allows.  Alec has been practicing his frosting skills for an upcoming challenge.

What I'm Dreading:  Nothing at the moment!

What I'm Working On: This past month I've made quite a few cards and scrapbook pages.

What I'm Excited About: Turning the clocks next month!

What I'm Watching/Reading: Home team (movie on Netflix), The Guilded Age (HBO+), The Righteous Gemstones (HBO+), The Jeopardy College Championship (Hulu), Marry Me (at the movie theater).  We finished watching The Big Bang Theory as a family and began watching The Fresh Prince of Bel-Air.

So far I've read 8 books this month and hope to squeeze in perhaps one more before the end of the month.

What I'm Listening to: Sweet Magnolias playing in the background.

What I'm Wearing: Still plenty of warm layers...  with boots and winter gear...

What I'm Doing This Weekend: I'm not sure; hopefully getting together with some friends we haven't seen in a long time.

What I'm Looking Forward to Next Month: March is typically when our weather starts to turn very, very slowly towards spring and I am looking forward to more light, more sun, and more warm days!

What Else is New:  Not much; though we did spent last weekend at an RV/Camping show looking at toy haulers... not sure we'll buy one any time soon but it's on our radar for retirement and vacations with just the two of us now that the boys are getting older.   Does anyone have one that they just LOVE?!

    1. Yep, he just clicked with her right away. She's fabulous and fierce! She's a homeschooling mom so we used to hang out outside of karate too and 4 (of her 6) kids have black belts as well.

  5. Growing up, rummy cub was our family's favorite game to play. We have it now but so rarely play, I think I need to schedule a rummy cub game night :)
Your sweaters are all so comfy and pretty at the same time. Still need to wear layers around here too. Winter isn't done yet although it's been in the 50's yesterday, thunderstorms this morning and back below freezing tomorrow. I am so ready for spring to arrive and to stay!!
Your new family room furniture for the basement looks really nice and so comfortable!

  10. There are a lot of RV parks and shows out here in AZ. If you do start to go and travel, you'll have to come visit for sure.
I love doing puzzle, but they are so addictive to me. Luckily we have one always going outside on the neighbor's patio, because otherwise I'd get nothing done, haha.

    1. I'll keep that in mind! My husband's great aunt used to have a puzzle going all the time and I loved to go visit her and work on whatever she had out at the time.

  11. Oh, your basement is wonderful. Ours is finished and fully furnished, but we spend little time down there. I think it's because it lacks windows! If ours had windows like yours, I would be down there all of the time!

  17. I can't believe how long the wait is for furniture these days. Yours was totally worth it! We were so disappointed that our RV show was cancelled this year again, we are about one year out from our purchase and so looking forward to it. Not a toy-hauler though, so I can't help you there!

    1. Thanks! Though I found out this week it's downright cold down there when the woodstove isn't running. Luckily with snow in the forecast we got it going tonight and I know we'll keep it on through the weekend.
