Turkey and Rice Soup

My boys had never had homemade turkey soup before and honestly thought I was nuts for suggesting rice in a soup.  I just knew I had to make them a classic turkey and rice soup to try.  

I took our favorite chicken/noodle soup recipe and just made some minor modifications for a delicious soup that simmered in the crock pot most of the day.




It is such an easy meal to make!

Ingredients:

10 cups water
5 chicken bullion cubes
2 stalks celery; sliced
2 large carrots; peeled and sliced
1 Tbsp onion flakes
1 tsp minced garlic
2 bay leaves
1/4 tsp rosemary
1/4 tsp thye
1 Tbsp lemon juice
1 cup diced leftover turkey
1 cup white Jasmine rice

In my large crock pot I put the water water, chicken bullion, celery, carrots, onion flakes, garlic, bay leaves, rosemary, thyme, lemon juice and turkey.  I them on low all day.  

When it was just an hour or so before dinnertime,  I added in the cup of rice and gave everything a nice stir then put the lid back on until we were ready to eat. 

I served the soup with some fresh bread and butter and on a cold, snowy, winter night, it really hit the spot.  The boys LOVED it!  (Well, the two that will eat soup enjoyed it anyway)


We like a nice thick, hearty soup but you could cut back on the rice or add a bit more water/ broth if you prefer a thinner soup.  

It was loaded with flavor and even the leftovers were gobbled up in just a day.

  2. I don't think I have ever had turkey soup. It looks and sounds delicious. It would be a great way for us to use our leftover turkey at Christmas x
