Chocolate Raspberry Layer Cake

Welcome to the July Pinterest Challenge! The purpose of this Pinterest Challenge is to motivate us to not just pin, but to make it happen!

 I was pretty excited for this month's Pinterest challenge theme: Tutti Frutti.  My family and I eat a lot of fruit and I just knew we wanted to try a new recipe for this challenge.  We finally settled on a chocolate layer cake recipe with a layer of raspberry filling.  



I don't know about you but I just LOVE that combination of chocolate and raspberries.  We used this pin for our cake and frosting and this pin for making fresh raspberry filling online.

First he baked up the two cakes following the recipe then set them to cool overnight.


The next morning he cooked up the raspberry sauce; again following the recipe and instructions. 



He set it in the fridge to cool while he made up the frosting. 



We did have to alter the frosting recipe; we only used about 9 or 10 cups of the powdered sugar not the full 11 1/2 the recipe called for.  It was getting quite thick and we actually added a few extra tablespoons of milk to thin it out.  

After leveling the cake he put a thin layer of frosting on the bottom layer then piped a rim around the edge to hold in the raspberry filling. 



We had SO MUCH leftover raspberry filling it was crazy.  Next time I would probably 1/2 or even 1/4 the recipe.


He added the next layer on and finished putting a simple coat of frosting on then set it aside for the crumb coat to set.

Once the crumb coat was ready Alec finished frosting the rest of the cake. 




He followed the recipe in the first pin to make the shaved chocolate to top off the cake. 


It looked amazing and I could not wait to dig in!


It was a huge hit with everyone that tried it.  We did store the cake in the fridge because of the raspberry filling.
