My Favorite Stuffing Recipe

 After writing up my Monthly Musings post on Thanksgiving I had someone write and ask me for my stuffing recipe.  I couldn't believe I had never shared this recipe on my blog.  I decided I needed to fix that right away so I whipped up a batch of stuffing to go with a turkey breast I was cooking up in the crock pot and made sure to take pictures as I went.  


Now I don't always made my stuffing exactly the same; some times I add in a bit of mushrooms and omit the onions.  This time I happened to have an apple handy and tossed that in; which I'm pretty sure I'll be doing from now on! 

Bottom line is I like a lot of "stuff" in my stuffing so it has little pops of flavor with every bite and there are so many yummy things you could mix in to make it more you.  

Ingredients:

  • 12 ounce bag Pepperidge Farm Herb Seasoned Classic Stuffing Mix
  • 4 Tablespoons butter
  • 1/2 medium onion, minced
  • 2 stalks celery; sliced
  • 2 carrots; peeled and sliced/chopped
  • 1 small apple; minced
  • 2 cups chicken broth
  • handful of craisins
  • handful of pecans (I like whole pecans but pieces work well too)


In a large skillet melt the butter and sauté the onions, celery, carrots, and apple until fork tender.  


Add in the 2 cups of broth ad bring to a boil. 



Remove pan from heat and mix in the stuffing mix.  You can sprinkle with the craisins and pecans and serve immediately but I like to put my stuffing a 13x9 pan and put it in the oven before serving.  I think it gives the pecans a nice roasted flavor and dries out the stuffing just a bit.  Plus this ways I can make my stuffing up ahead of time and just heat it in the oven before serving. 



I typically give it a good stir after sprinkling on the pecans and craisins.  I just love that every bite usually has something sweet and savory, something chewy and crunchy and soft.  For me it's all about the contrast.

  3. This looks so good! I love homemade stuffing and I can't have the boxed kind anyway because it has MSG in it, so I make mine as well. Stuffing is actually my favorite Thanksgiving side dish. :)

  4. This looks amazing!! I love the pecans in there!! My family actually now makes leek bread pudding instead of stuffing, but it is still pretty good! Thank you fir the recipe!

    1. You really can't mess it up; though it used to intimidate me too. If it's too dry for your taste add a bit more broth (at any point before serving), if it's too wet leave it in the oven longer.
