Chocolate Chip Banana Bread

We buy a lot of bananas in our house and on occasion one or two of them get so over ripened that no one wants to eat them.  That's when I peel them and put them in the freezer.  Once I have about 4 or 5 of them stocked up I make some banana bread.  I like a nice quick and easy recipe!  



Now, I do not like bananas at all-- not the smell, not the texture, not the taste.  So I'm not one to experiment much with recipes when it comes to banana bread.  I always use my stand-by Betty Crocker recipe and occasionally mix in things like chocolate chips, chopped peanut butter cups, frozen blueberries, or even a giant scoop of peanut butter.  So far this recipe has never let me down and since I can make the whole thing in the stand mixer it comes together quickly.

Ingredients:

1 1/4 cup granulated sugar
1/2 cup stick butter; softened
2 large eggs
3-5 bananas; ripened (I mash them right into the recipe using the mixer paddle)
1/2 cup skim milk
2 tsp. vanilla extract
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup chocolate chips (I mixed mini and regular sized ones for this recipe since that's what I had on hand) 


To make the bread:

Preheat oven to 350 degrees

In the bowl of the stand mixer I cream together the sugar and butter until the butter is a light yellow color then add in the eggs and bananas until well combined.  I then pour in the milk and vanilla and set the mixer to low while I slowly add in the flour, baking soda, and salt.  When everything is combined I add in the chips and mix them in by hand making sure to scrape down the sides and bottom of bowl. 


I line two loaf pans with parchment paper and pour 1/2 the batter into each pan. 



I bake the bread in the middle of the oven for an hour to an hour and fifteen minutes depending on the size of the loaf (8 inch loaves take an hour while 9 inch loafs take an hour and fifteen).  I always cook them until a toothpick inserted in the center comes out clean.


I let them cool in the pan on the counter for at least 5-10 minutes before turning them onto a wire cooking rack to cool completely or slice and serve warm. 


I tend to keep one loaf out for us to enjoy and put the other in the freezer.  My guys like their banana bread grilled with butter or heated real quick in the microwave with a bit of cream cheese on it.  


We store the loaf in a large Ziploc bag on the counter and it never lasts longer than a couple of days!

  6. I love making (and eating) banana bread. I use a similar recipe and put banana slices on the top, with a sprinkle of porridge oats. First time I did it, children thought I'd bought it. #mmbc

  7. I do exactly the same with any bananas in our house that go past their best! At the moment I'm not getting many though, both our boys are stuck at home due to the coivd lockdown and they go through the bananas as quick as I can buy them! Once they are working away again a bit more hopefully I'll get enough for a loaf again!!

  9. Somehow missed this post. That bread looks so moist and good. Great way to use up bananas. I freeze ours for such recipes and for smoothies. We make a pumpkin bread that is similar. Oh to have a slice of both right now.
