Oatmeal Scotchies
I was always so disappointed as a kid when I grabbed a cookie and found that it was an oatmeal raisin cookie. I hated those! It wasn't until I got older that I realized I didn't mind the oatmeal cookie part but I really didn't like the raisins. I do like raisins; just not in my cookies.
I started playing around with other things to mix into my oatmeal cookies and while I liked most of them the one that I really fell in love with were the oatmeal scotchies!
Years later my sister told me she loved these cookies and now I can't make them without thinking of her. They really aren't hard to make either. I mostly follow the recipe off the Quaker oats container with just a few minor tweaks.
Ingredients (makes 4 dozen cookies):
1/2 cup + 6 Tablespoons butter
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
Pinch of nutmeg
1 cup butterscotch chips
3 cups oats (quick or old fashioned- uncooked)
Heat oven to 350 and line a cookie sheet with parchment paper.
In the bowl of the stand mixer I combine the butter, sugar, eggs, and vanilla.
In a separate bowl I combine the flour, baking soda, cinnamon, & nutmeg then add it to the mixer bowl. Once nicely combined I add in the chips and oats and mix well using a wooden spoon.
I like to use a cookie scoop to measure out my cookies but you can also drop cookies onto the sheet using rounded tablespoons. Bake for 8-10 minutes until golden brown.
Cool on the cookie sheet for 2 minutes before transferring to wire rack. Cool completely before storing in an airtight container.
