Citrus Yogurt Marinated Chicken

I had some leftover yogurt that I really didn't want to eat.  I typically buy plain non-fat yogurt to eat with my fresh fruit and granola but during this pandemic it was nearly impossible to find and I had been buying low-fat plain yogurt.  Once I began counting points on WW again and I realized that low-fat was 5 points compared to the 0 for fat free I decided I didn't like plain yogurt that much! But I also can not stand wasting food so I knew I had to think of a way to use it up.



A few years ago I had made a yogurt marinade for chicken we were throwing on the grill and I remembered that chicken being extra tasty and tender.  Of course when I went to search for my recipe I couldn't find it anywhere but I was pretty confident that I could whip up a good marinade anyway using what little I could remember and oh my goodness!

This is my new favorite spring/summer chicken recipe!

It might not look like much in these photos since we cooked up the chicken in the oven and not on the grill (plus my camera doesn't take great photos when the lighting is low at dinnertime) but I promise you that this is so tasty! 

Ingredients:
1 cup plain yogurt
1/8 cup vegetable oil
2 Tablespoons orange juice (or lemon juice)
1 clove minced garlic
2 Tablespoons Mango Magic (I found this at Walmart for just a few dollars last summer and it is delicious sprinkled on fish and chicken)  If you can't find this don't hesitate to substitute other spice mixes.  I think this would be great with some rosemary and thyme, a bit of ginger, or even just some Italian seasoning.
12 chicken tenderloins or 6 chicken breasts

I mixed up the marinade ingredients in a bowl using a whisk.



I placed my chicken into a Ziploc bag and added the marinade then put it in the fridge for a few hours.


When it was time to cook, I laid each of he tenders out on a cookie sheet and baked them in a 350 degree oven for 20 minutes (or until cooked through).

The mango and citrus gave it a tangy sweet taste while yogurt kept them nice and tender.  I served the chicken with some roasted potatoes and a salad.

    1. I have a few like that; but I didn't tell them yogurt was in this until after they ate it. LOL. It's easy enough though to marinade some chicken pieces and leave others plain.

  6. I enjoy yogurt with my breakfast cereal rather than milk. I get the Greek variety because I like the thick texture. I add diced apples, nuts and a sprinkle of raisin bran on top. Very satisfying for me. - Margy

    1. Oh; that sounds really good! I tend to mix my yogurt with fresh sliced strawberries and pineapple and top it with a sprinkle of granola.
