Encouraging Hearts and Home & April Monthly Musings

Image
Another month has come and gone and while there were times this month felt like it was 365 days long in and of itself it's still amazing to me that we are already starting the 5th month of our year.  May tends to be one of my favorite months as it usually means warmer weather, budding trees, and the more time spent outside.  It's typically when we're finishing up our school year and looking for some fun things to do. Before we get to today's link up, I wanted to participate in this month's musings: 1.  My 5 must have items for spring and summer include sandals/ flip flops, tank tops in a variety of colors, sunglasses, books!, and sunscreen/ bug spray. 2. My favorite foot wear is definitely flip flops. 3. It's not easy transitioning my wardrobe from one season to the next since our weather tends to be all over the place in spring (I was wearing a turtleneck and wool sweater on Monday)... but I usually start with short sleeves and flip flop with

Another month of sheltering in place down... and it sounds like another one to go.  This may be a fairly boring What's Up Wednesday but I enjoy this link up too much not to participate. What We're Eating This Week:  With our grocery stores back to being fairly decently stocked we've taken to meal planning once more. Saturday: Grilled chicken, ham & pea pasta salad, and salad. Sunday: Crock pot turkey breast with squash casserole and salad Monday: Pork chops with egg noodles and leftover squash casserole Tuesday: Chili and cornbread Wednesday: Ham and cheese lasagna with salad Thursday: Chicken, broccoli, and rice casserole Friday: Homemade pizzas and salad What I'm Reminiscing About: Last April when life looked like this... What I'm Loving: That Alec worked so hard to make Ian's cake.. even though it was made with chocolate, peanut butter, and coffee (three things Alec does not like and won't

When we got our Misfits Market box the other day we had two mangoes and 5 limes inside.  While I do eat mangoes and limes, neither one are my favorites but I thought I might be able to come up with some sort of recipe that paired them.  I just knew these flavors would be perfect for our spring recipe swap! I immediately headed to Pinterest and found so much inspiration.  Alec and I finally settled on trying our hand at making some scones and I have to say that pairing of the sweet mangoes with the tart limes was just amazing!! Ingredients: For the scones: 1/2 cup milk (we used 1%) 1/2 cup sour cream 2 cups all purpose flour 1/2 cup sugar 2 tsp. baking powder 1/2 tsp salt 1/4 tsp. baking soda 1/4 tsp. cinnamon 1 stick butter; frozen and grated 1 1/2 cup diced fresh mangoes Lime Glaze: 12 Tablespoons pow
