Weight Watchers Pumpkin Turkey Chili

I have never really been a fan of chili but I would make it once or twice during the winter for my husband.  I had a go to recipe I used and never thought much about how I could change it to actually make it something I might enjoy eating.

Then I saw this pumpkin chili recipe from Of the Hearth and thought that sounded like something I might like with just a few tweaks.

I attempted my first pumpkin turkey chili and found that I loved the added texture the pumpkin provided and with an addition of  one "odd" ingredient (cinnamon) it had a taste I really enjoyed!  Best of all our chili recipe is ZERO points on the blue Weight Watchers plan that both my husband and I follow.



Ingredients:
1 can red beans; rinsed and drained
1 can black beans; rinsed and drained
1 can cannellini beans; rinsed and drained
1 can diced tomatoes with the juice
1 can sliced mushrooms (or about 1 cup fresh sliced mushrooms)
1 can pumpkin puree
1 package ground turkey; browned and drained.
2 tsp. taco seasoning
A sprinkle of cinnamon
1/2 jar salsa (we used mild)
1 clove minced garlic
Sprinkle of dried onion

I just added all the ingredients together in our crock pot and let it simmer on low all day.

We like our chili nice and thick but you could easily add a cup or two of beef/ chicken/ or vegetable stock for a soupier version.

  3. This is very similar to a 21 Day Fix pumpkin chili recipe I have used and enjoyed. I have to make sure PC doesn't see the can of pumpkin, though. If he knows there is pumpkin in the recipe, he doesn't 'like' it as much. Just like a kid. Had not thought of adding a dash of cinnamon but I love that idea. I am wanting to try a mole' chili that is made with the traditional Mexican mole' seasonings. Pinning this for future reference.

    We have been eating with great abandon and Paul's nursing several injuries so we aren't working out like we were. Got to get back on track!!

    1. I was really afraid that my boys wouldn't eat the chili once they knew there was pumpkin in it so I didn't tell them until AFTER they had eaten it. Luckily they liked it better than our old recipe too so they're OK with me putting the pumpkin in now. I haven't been doing well with eating and tracking at all... I'm still in quite a bit of pain and that has just made healthy eating so much more difficult.
