Weight Watchers Zero Point Fish Casserole

Today I am joining with my fellow bloggers to share a family favorite recipe.  I have had the photos for this post ready to go since November but never got around to writing it up and I knew right away this was the recipe I was going to share... even if it technically might not be a FAMILY favorite since none of my boys will eat it!

But, we did have my mother and step father over one night and when I served this they both asked how it was made.  They loved it and since they're family-- I'm totally content with counting this as our newest family favorite.






I found a recipe for a similar Mediterranean fish casserole in an old Family Circle recipe that I used to enjoy making but I wanted to modify it partly to use what I had on hand and partly because I am always looking for ways to cut out points on my main meals so I can eat more sweet during the day; what can I say I have a major sweet tooth!

Thus my new fish casserole recipe was born and I honestly like it better than the original because we used all our favorites vegetables and not just the ones the recipe was telling me to use.  Feel free to do the same thing!  I can't wait to try this in the summer with zucchini and summer squash and fresh tomatoes-- maybe even with some salmon... the possibilities are endless and this was one of those recipes where I really didn't measure much of anything.

You can't go wrong I promise you!



Ingredients for the fish casserole:
Butternut squash
vegetable oil spray (I like to use my standard cooking oil in a Misto bottle)
White fish fillets (we used haddock)
broccoli florets
sliced mushrooms
lemon juice
salt and pepper

First I sprayed the pan with just enough oil to keep the squash from sticking and preheated the oven to 400.  I then put my diced and peeled squash in an even layer over the bottom of the pan and sprinkled with some salt and pepper.



I roasted the squash for 30 minutes and then tested to see if they were fork tender.  Once they were cooked through I gave them a quick stir and then added our fish fillets on top.  This meal was only made for two of us so I just used the three remaining pieces of fish I had on hand. 


I topped the fish with some fresh broccoli florets and mushrooms slices.  I lightly sprinkled the dish with 1 tsp or so of lemon juice and another pass of salt and pepper.  Then popped it back in the oven for another 20- 25 minutes or until the fish was nice and flaky.




Then we scooped up a nice heaping portion of fish and vegetables. It was so filling and just bursting with flavor.  The flaky fish and the slightly crunchy broccoli paired wonderfully for a variety of textures too.

  6. This looks like a perfect midweek meal, I love anything that you make in one dish and that just pops in the oven. I think all my family would eat this too (what a bonus) I've never cooked broccoli in the oven like this, I always steam it. This could open up a whole load of possibilities - thank you!

    1. You know I didn't even think of it; but I really am not having winter blues at all this year and I bet it is due to all those extra veggies and nutrients I've added into my diet by eating better.
