November Pinterest Challenge-- Zero Point WW Taco Soup

It's the third Tuesday of the month and time for another Pinterest Challenge!  I love a nice hot soup on a cold day and when I saw this pin for Taco Soup on Pinterest (that was also Weight Watchers friendly!) I just knew I had to give it a try.  All three of my boys actually eat tacos so I thought they might be open to trying the soup as well.



I changed the recipe a bit to fit our tastes and what I had in our pantry.

Ingredients:

1 lb. lean ground turkey
2 tablespoons taco seasoning mix (I make my own but one store bought packet would work)
2 cups reduced fat beef broth
2 cups water
14.5 ounce can diced tomatoes with the juice
14.5 ounce can black beans, drained and rinsed
1/2 package frozen corn kernels

I browned the turkey in a skillet and then added all the ingredients to the crock pot and set it on low for the day.  Within just an hour, you could already smell the taco seasoning.


Since the soup was zero points we could have made corn bread or any sort of homemade bread to serve it with but instead I served the soup with sour cream, fat free shredded cheddar cheese and some whole wheat tortilla chips with salsa.

It was a filling meal and so flavorful.  My husband declared it his new favorite soup!

  10. That looks delicious! I would totally eat that. 3 out of 4 of us in my family would eat that--one picky eater would probably balk at the tomatos and corn mixed in with everything, LOL.

  13. This is a favorite soup of my mother's and I love it as well. I wish I could get my husband on board (sigh). Have never tried with ground turkey. Looks yummy!

    1. That's too bad your husband doesn't like it! We've slowly been swapping ground turkey out for most recipes we used to use ground beef in.
