S'mores Brownie Cake
We celebrated my mother- in- law's birthday yesterday. Alec offered to make her a cake like he does most years and together they settled on a S'mores Brownie cake. He read up on a few different cake and brownie recipes before settling on what he wanted to do combining a few different recipes and adding his own twist too.
First Alec made a graham cracker crumb base:
11 graham crackers
5 tablespoons melted butter
2 tablespoons sugar
Then mixed up his brownie layer:

Finally he topped it all with fresh mini marshmallows and a drizzle of chocolate ganache:
1 cup mini marshmallows
1/4 cup heavy cream
1/4 cup chocolate chips
Using the food processor he broke the graham crackers down into crumbs and mixed it with the melted butter and sugar. Lining an 8x8 pyrex dish with parchment paper he pressed the graham cracker mixture along the bottom and up the sides. Then baked it for 10 minutes at 350.
While the graham cracker base was cooking he mixed up the brownies following the recipe cited above. Then poured it into the slightly cooled crumb layer and baked for an additional 35 minutes.
We set the whole pan aside on the counter to cool until just before we were ready to serve it.
He poured the mini marshmallows on top and broiled the whole thing for just a few minutes until the marshmallows melted and turned lightly golden brown.
In a small saucepan he whisked together the heavy cream and chocolate to make a ganache and drizzled it across the melted marshmallows before serving.
We cut it into 9 servings. Everyone raved over how well it tasted too.
