Fiesta Pasta Salad Recipe

I have been re-working so many of our favorite salads now that I'm on Weight Watchers.  I had lots of seasoning, lettuce, tomatoes, and corn left over from a night that we had tacos and I just knew I had to make up a new summer salad for us all to enjoy.

Only 5 WW points per cup this salad was delicious!




Ingredients:

1 box pasta, (about 6 cups; cooked and drained)
1 cup chopped romaine
2 medium tomatoes; diced
2 ears of corn; cooked
4 Tablespoons Hellman's light mayonnaise
1/4 cup white vinegar
1 ounce package of Hidden Valley Ranch dressing
1/4 cup plain non-fat Greek yogurt
1/2 tsp. taco seasoning
1/2 tsp. cider vinegar

In a medium bowl I combined the pasta, romaine lettuce, tomato and cut the corn kernels off the cob; mixing them together well.

In a small bowl I used a whisk to combine the mayo, vinegars, dressing mix, yogurt and taco seasoning.


Then I poured the dressing over the pasta and gave it all a good stir.



A full measured cup is a serving and I thought it was delicious!  My son thought it could have used a little less ranch flavor and my husband thought it should have had a touch more taco seasoning so feel free to adjust to ingredients to your liking.
