3 Point Turkey Pot Pie WW Recipe

I have been on Weight Watchers for just over a month now and have been having so much fun re-vamping some of our old recipes and making them more WW friendly.  We eat a lot of pot pies in this house; particularly in the fall and winter and I just knew I had to come up with something we could use in place of the crust (since that's where most of the points lie!)

I came up with this delicious 3 point dinner that we just loved!




Ingredients:  Serves 6
2 cups diced turkey breast (skinless, cooked)
12 ounce package frozen vegetables (we used 1/2 peas, 1/2 corn)
1 cup fat free turkey broth
2/3 cup water
3 Tbsp. soup mix (I use this recipe without the potato flakes or marjoram)
1 egg scrambled with just 1 tsp water for egg wash
1 cup greek yogurt
1 cup self- rising flour


I added the diced turkey to the bottom of my 11x7 pyrex dish.  Then sprinkled the frozen mixed vegetables on top.




I poured the turkey broth over everything and gave it a good stir.



In the microwave I combined the soup mix with the 2/3 cup water and microwaved on high for 2 minutes until thick and creamy then I poured that over the turkey and vegetables too and gave another good stir.



In a large bowl I mixed together the Greek yogurt and self- rising flour as if I was making these 2 ingredient Weight Watchers bagels.  I turned the dough over onto my mat and rolled it out to fit the size of my pan.



I put the dough on the turkey and vegetables, poked it with the fork a handful of times for venting and then washed the top with a light egg wash.



Bake at 375 for 20 minutes until dough feels cooked through then broil for up to 5 minutes to lightly brown the top.



Cut into 6 servings and enjoy it while it's nice and hot.  I actually put all 6 servings into individual Tupperware containers and we used them as our lunches for a few days. It reheated quite nicely!

    1. It really is! My husband just loves chicken pot pie so I knew that was one recipe I had to figure out how to make healthier.
