Italian Turkey Soup

I was looking for a healthy and hearty soup to make one day when it was cold and snowy out.  I rummaged through the freezer, fridge, and pantry to pull together a very tasty soup that I'm dubbing our Italian Turkey Soup.



I happened to have lots of leftover turkey on hand but this soup would work well with burger, chicken, or even without the meat entirely!  

Ingredients:

1 package frozen mixed vegetables
2 cups frozen turkey
14 1/2 ounce can diced tomatoes with the juice
1 6 ounce can tomato paste
3 cups beef stock (or three cups hot water with 3 beef bullion cubes)
1 Tablespoon dried Italian seasoning
2 cups water
1/2 box rotini

In the crock pot I mixed together the frozen vegetables, turkey, diced tomatoes, tomato paste, beef stock, Italian seasoning and water.  I set it on high for 5-6 hours.  I didn't add anything else for seasoning because I knew my beef stock had minced onion, garlic, salt and pepper.  If you are using bullion or plain beef broth you might want to add other seasonings like salt, pepper, bay leaf, garlic and onion.




I did stir it a few times until all the stock, turkey, and vegetables had thawed out.


I added in 2 cups of water and the 1/2 box noodles then set the crock pot on low for another hour or until the noodles were cooked through.




It was such a hearty soup and so good on a cold winter's night.
