Cinnamon Chip Zucchini Bread

I was so surprised to see some pretty good looking zucchini on sale at my grocery store (in the middle of winter!) and I just could not pass it up. I wanted to make a squash casserole to go with our dinner and had a bit of extra zucchini left over.   I decided to combine the bag of cinnamon chips in our pantry with my favorite zucchini bread recipe and made a delicious sweet bread.


Our favorite recipe comes from an old Betty Crocker cook book and I just love how easy it all comes together.  

Ingredients:

3 cups shredded zucchini
1 2/3 cup sugar
2/3 cup vegetable oil
2 teaspoons vanilla extract
4 eggs
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground loves
1 teaspoon ground cinnamon

I preheated my oven to 350 and moved the rack to the lower part of my oven so that the tops of pans would be in the center.  I then sprayed 2 loaf pans with non stick cooking spray and set them aside.


In the stand mixer I combined all the ingredients in the order listed; making sure to mix well after each addition.  Then I gently folded in the cinnamon chips and scraped down the sides of the bowl.


I poured the batter evenly into the two pans and set them in the oven for 1 hour and 20 minutes; checking to make sure that a toothpick inserted into the middle came out clean.


Then I set them in the pans to cool.  After 20 or so minute I ran a knife around all the edges and loosened the bread from the pans.  Then I set both loaves back on the rack to cool completely.


Once cooled we sliced and enjoyed! The cinnamon chips added a really nice punch of flavor and a bit of a crunchy/ chewy texture that I just loved!

My youngest son (who would not normally eat zucchini bread) even enjoyed a delicious slice of this bread.





Look at those sugary cinnamon-y pockets of flavor!  YUM!

    1. I never had either but I happened to spy them out of the corner of my eye in the baking aisle and they just called out to me! I love cinnamon.

  3. Oh man, this sounds amazing. I love cinnamon and I had no idea that cinnamon chips even existed! I'll be looking for those tomorrow at the grocery store!
