Crunchy Sweet Cole Slaw

I have never been a fan of Cole slaw but in the last couple of years my husband and older son have gotten to me to try making our own Cole slaw a few times and while I still can't claim I LOVE it, I have made up a recipe that I enjoy.

It's so easy to make and I do like the tangy sweetness of our modified recipe.  I hope you do too.




Ingredients:

2- 14 ounce bags Cole Slaw mix
1 cup mayonnaise
1 tsp. yellow mustard
4 Tablespoons cider vinegar
1/4 cup granulated sugar
Salt and pepper to taste

Assembly takes just minutes too!

I add the two bags of slaw mix to one of my Tupperware bowls and set it aside.


In another smaller bowl I whisk together the mayonnaise, mustard, vinegar, and sugar.



When it's all mixed together I pour the mixture over the Cole slaw and give it a good stir.  I then sprinkle a bit of salt and pepper on too.   The cabbage will look very dry and you might think you need more dressing but if you let it sit for just a few hours you'll have the perfect Cole slaw combination!

I know it looks dry; but just wait!

I typically prepare my Cole slaw in the morning and we eat if for dinner but even just a few hours later the Cole slaw looked good.   Moist but not soupy, crunchy and tangy and just a bit sweet.



We made this to serve with our air fried potatoes and breaded haddock.

  1. This is similar to my grandma's recipe only she shredded the cabbage and carrots. I am going to try this and see!

    1. I thought about shredding the cabbage and carrots in the food processor but it's so much quicker to buy them.
