Double Chocolate No- Bake Cheesecake

My boys and I decided to make another no- bake chocolate pie the other week and before we knew it we had turned it into another yummy cheesecake!  I think I might have a problem.  

There is just something about chocolate and the creamy taste of a cheesecake combined that I just LOVE.  

This was a quick and easy pie to make and it was so light and fluffy too.  



Ingredients:

For crust:
19 Oreo Cookies
3 Tbsp melted butter

For filling:
2 packages instant chocolate pudding
2 cups 1/2 and 1/2
4 ounces cream cheese
1 cup melted chocolate Tollhouse morsels
1 8 ounce container Cool Whip
1/4 cup Skor crumbles for garnish

Crush Oreo cookies and mix with butter.  Press onto the bottom and sides of a pie pan.  Refrigerate while preparing the filling. 


In the stand mixer mix together pudding packages with 1/2 and 1/2 for two minutes on medium speed. 




Add cream cheese and melted morsels to the pudding and mix for another minute or two until well combined.



Spread 1/2 of the pudding mixture into the prepared pan in a nice even layer.  The pie should only be about 1/3 of the way full.

Mix 1/4 of the Cool Whip container into the pudding mixture.  This layer will be a bit lighter in color and fluffier in texture.  Spread over the first layer in the pie plate.



Top with remaining Cool Whip.


Sprinkle with Skor Bar pieces


Chill a few hours until set. Then slice and serve.






I think this might have been my favorite cheesecake recipe yet!  It was both satisfying and light.

  10. I'm the same way--something about the cream cheese and chocolate combination just gets me every time. This looks amazing! The topping sounds yummy.
