Loaded Baked Potato Salad

I have had more than a few potato salad recipes catch my eye on the internet over the past couple of week but each time I clicked on them to read further I found a few ingredients I either didn't have or we didn't like.

So I decided to make my own by combining a few recipe ideas.



I took all of our favorite baked potato toppings and combined them into one tasty salad!

Ingredients:

3 Large baking potatoes; peeled and cut into bite sized pieces
6 slices bacon, cooked and cooled
1/2 cup shredded cheddar cheese
1/2 cup sour cream
2 Tablespoons chives
1/2 cup mayonnaise
Salt and Pepper to taste

1.  After peeling and cutting potatoes I brought them to a rolling boil and cooked until fork tender.



2.  While the potatoes were cooking I started heating the bacon.  We use our large skillet for cooking bacon since it fits a whole pound package.  I knew I only needed a few slices but bacon never goes to waste in our house so cooking extra was no big deal.


3.  In a bowl I combined the sour cream, mayonnaise, cheese, and chives.



4.  After the bacon had cooled I crumbled it up and added it to the bowl.

5. I rinsed the potatoes in cold water until they were cooled off.  I wanted to make sure that the would not melt my cheese.  Then I mixed everything together and sprinkled with salt and pepper.





It was amazing!  The bacon gave the salad a nice crunch and all the flavors were reminiscent of a night out at a nice steakhouse.  Yum!
